V teoretické části bakalářské práce je popsán proces výroby sladu, který zahrnuje příjem a čištění zrna, máčení, klíčení, hvozdění a odkličování. Jsou popsány jednotlivé druhy sladů a jejich uplatnění při výrobě piva. Dále jsou zde uvedeny i surogáty použí-vané při výrobě piva. V neposlední řadě je popsáno pivovarnictví, které zahrnuje výrobu mladiny a výrobu piva. Práce obsahuje i praktickou část, která je zaměřena na výrobu tří variant sladů z purpurové pšenice a uvaření piva z vyrobených pšeničných sladů The theoretical part of the thesis is focused on manufacture of malt which contains income and cleaning of grain, steeping, germination and kilning. Different kinds of malts and their application in the manufacture of beer are described in the work. It also consists of surrogates used in the manufacture of beer. The thesis also deals with brew-ing, wort and beer production. There is a practical part aiming at the production of three variants of purple wheat malt and beer brewing made from wheat malts
