Monitoring of Phytoestrogens Expression to the Milk and Milk Products

Phytoestrogens are very intensively studied in recent years because they show different pharmacological effects on human health. For example, it was demonstrated that phytoestrogens reduce the risk of certain cancers (breast, prostate or colon), act as antioxidants in the body and affect the activity of certain enzymes. In addition, also it was demonstrated number of positive effects of soybean phytoestrogens on the health status of women in the menopause, such as reducing the risk of atherosclerotic cardiovascular disease or osteoporosis. Various technologically processed soy beans are important part of the feed rations mainly for high-lactating dairy cows, because they are a valuable source of the energy and high-quality protein, despite their negative effect on reproductive performance. Phytoestrogens consumed from the feed rations are hydrolyzed in the rumen of dairy cow and together with their metabolites are absorbed in the small intestine into the blood. They can be excreted from the body in urine or milk. From this perspective, cow's milk may become a source of phytoestrogens substances, especially equol in the human nutrition. On the other hand, some research results suggest possible potential risks associated with phytoestrogens intake in the diet on human health. At the some age (infants and young children) and group (vegetarians) categories may be dietary intake of phytoestrogens undiserable. According to most experts, a beneficial effect on human health prevail the potential risks. However, the risks associated with phytoestrogens intake in food can not be ignored and therefore phytoestrogens are still actual problem in the field of scientific research.
A complex study of biological effects of some soya products

Soybeans and products thereof are considered as a very contradictory legume across layman and expert opinions. Some see it almost as a “superfood” while others avoid it due to its biologically active content with an unclear effect on the organism. As a lot of research on soybeans was already performed the content varies considerably and it is not easy to grasp the issue correctly. The objective of the research part of the thesis is a structuralized study of already published scientific knowledge to clarify the current state of the art. Experimental part of the thesis focuses on characterisation of soy and its products in terms of active ingredients content and determination of antioxidants and antimicrobial effect. After that, the cytotoxic effect on human heterogeneous colorectal adenocarcinoma epithelial cell line and mouse melanoma cell line is determined by in vitro testing. All obtained information and results of experimental part could possibly serve as a starting point for further study of soy and soy products, both in the dissertation and in the submission of a grant project.
Nutritional and microbiological characterization of soya tempeh cheese

Tempeh belongs to the fermented probiotic soybean products. Tempeh is a valuable nutritional foodstuff due to its rich source of protein, content of unsaturated fatty acids essential for human and high amount of antioxidants. The theoretical part describes nutritional composition of tempeh and soybeans. In the thesis are discussed positive and negative effects of soy on human health. In the thesis were followed up changes in the nutritional components caused by the fermentation process and the action of microorganisms. The experimental part deals with the identification of microorganisms, which are contained in three types of tempeh. Microorganisms were detected using method polymerase chain reaction. DNA was isolated from the products by use phenol extraction, using magnetic microparticles F-kol 77ox and magnetic nanoparticles F79/L3 PLL. As part of the nutritional analysis changes in individual nutrients and other substances in soybeans after tempeh fermentation have been studied. In the chosen products total content of essential nutrients – carbohydrates, lipids and proteins were analyzed. Amount of antioxidants such as phenolics and flavonoids were analysed by UV-VIS spectrophotometry. Determination of vitamin E content which was analysed by HPLC and determination presence of fatty acids which was determined by GC was incorporated to this thesis.
Development on the US Soybean market

Bachelor thesis deals with the position of soybeans in the American and world market. The first part characterizes general tendencies in the development of agriculture and moreover describes key features of examined crop. Analytical part of the thesis summarizes development trend of soybeans production in the US market, which is further compared with other significant world producers of this crop. In the scope of the world environment, the paper documents development of supply and demand, international trade and also analyses tendencies in growth of the competition in defined sector. The outcome of this research enables to analyze position of the US within the world soybean market and its future trends.
