Evaluation of public feeding practice in selected population groups

The aim of this thesis was to evaluate the level of feeding habits of a selected human population segment in order to assess their understanding of issues related to nutrition and to basic components in their diet. For this purpose, a measuring instrument (a questionnaire) was designed. The first part contained questions related to respondent´s eating habits preferences, while the second part of questionnaire included questions examining the level of respondent?s nutritional awareness. In total 389 questionnaires were personally administered and completed by the respondents, under supervision of teachers. On the basis of the recorded answers it was found that, when purchasing food, the interviewed persons are governed mostly by the quality of it (37%). It was also discovered that, 40% of people preferred local foods to foods from abroad. Only 13% of respondents indicated their ?always or almost always? preference for ?bio foods?. It may also be said that, the three most popular dairy products are yoghurts (80%), milk (72%) and cheeses (72%), as opposed to fermented drinks (43%), which are the least consumed dairy products. Among the most popular meats the respondents included these three categories: chicken (83%), pork (73%) and beef (47%). The least favourite meat selected by respondents was mutton and lamb (35%). It was found that, 27% of the respondents follow information presented on food packaging but also that, 16% of the respondents do not follow packaging data, at all. According to the recorded frequency of occurrence the sum of correct answers can be said that most students answer 4 questions correctly. The recorded answer frequency counts show that most respondents answered correctly the following question: "What is bio food?" (94% of respondents). The worst answered individual question had to do with choosing foods with the highest ?Vitamin C? content, with only 7% being correct. On the basis of recorded answers it may be concluded that; the food consumption was influenced by the type of school which the respondents attended; as it appears related to the respondents´ age and their individual ability to decide on their food money spending. The questions that examined the level of information have shown that, the overall percentage of correct answers was increasing depending on the age of a respondent. The total percentage of correct answers kept increasing in relation to increasing age of respondents. No influence of gender on percentage totals of correct responses was demonstrated.
Food from the perspective of nutrition and health claims

The work has been collected basic information on nutrition labeling and health claims in order to develop a comprehensive understanding of their importance for consumers. The main aim of this thesis was to determine the attitude of consumers to the information provided. How are food consumers familiar with these concepts, how they are perceived and whether they are clear and understandable information on the packaging. Subsequently, it was analyzed how selected companies applied nutrition and health claims on the packaging of their products and if they are beneficial for them.
Sources and methods of saturation of the organism with antioxidants

The aim of the thesis is to characterize sources of antioxidants and inquire the depth of knowledge about antioxidants among students of secondary school. The theoretical part of the thesis describes and divides important antioxidants for human health. The main sources of antioxidants in human diet are there divided, described and compared as well. The practical part of the thesis includes the inquiry which evaluates the theoretical interest in antioxidants and dietary intake of antioxidant supplements among 17-19 years-old secondary school students. The results are analyzed and graphically displayed. Research shows that more than a half of the respondents know the term antioxidants and consume these substances in the diet. However, it is important to increase knowledge of antioxidants already among young people and ensure the intake of these essential substances from a varied diet.
Additives in food and their properties

The aim of this work is to deepen the knowledge about additives in foods, the importance of technological additives in foods, their properties and effects on human health. The aim of this work is a study of technical and scientific literature on the topic: "additives in foods and their properties" and review of the literature. Also in the practical part, implementation and evaluation of a questionnaire survey of the experimental group related to the topic: "Validation and comparison of knowledge among the younger population and an aging population on the issue of additives in foods and their properties."
Catering habits of schoolchildren junior school

This bachelor thesis called Catering habits of schoolchildren junior school is focused on making of eating habits of primary school pupils. The theoretical part of the thesis analyzed current view of nutrition and quality of food and their role in making of eating habits. It describes basic ingredients of nutrition, the importance of immunology and healthy life style. It is also focused on hazardous food, such as allergenic food, additives and dyes in food. The practical part of the thesis is based on the research of eating habits of pupils in their schools and families. During the time of one week pupils and their parents recorded eating habits in prepared questionnaires. By means of these results the differences in eating habits were found out.
Perception of healthy food by Czech consumer

Purpose of the thesis was to find out and describe associations that are linked to the category of healthy food by consumers. Above all the aim was to identify, what represents healthy food for them and what other thoughts and themes are associated with healthy food by consumers. In-depth ZMET interviews were conducted to determine these associations. The findings and other issues related to the topic such as broader context and specifics of healthy food marketing are presented. The information mentioned can be used for marketing mix planning of companies in food industry. The research found out that healthy food is not perceived as special food category, but approach to the food consumption. Approach that takes into consideration what is good for the person in terms of health. For respondents healthy food represented mainly homemade dishes consisting quality, fresh, natural ingredients. According the respondents healthy eating is a way of eating respecting sum of principles. Main principles are variety and balance in the consumers diet.
Local producers support on Czech retail market

The thesis was suggested and assigned by Tesco Stores CR. The idea behind is to find out whether supporting local producers can bring a competitive advantage to an involved retailer on the Czech retail market. It is focused primarily on fresh food categories which seem to be the most suitable for local sourcing prefernce. The thesis also considers the relationship between quality-origin-customer expectation. The practical part includes two researches-one studies marketing tools used by retailers present on Czech market in order to promote local producers. The other one provides Czech food producers' opinion on retailers controlling Czech retail market.

V Centru hygieny potravinových řetězců v Brně (CHPŘ) jsou v laboratoři molekulárně biologických metod (LMBM) uchovávány referenční vzorky pro laboratorní detekci GMO. Byla zpracována metodika uchování referenčních vzorků‚ Metodický pokyn MŽP ČR pro odběr vzorků GMO/potravin nového typu uváděných do oběhu. Byly připraveny a vyplněny formuláře k získání přehledu MŽP o používaných metodách pro průkaz a stanovení GMO a potravin nového typu na bázi GMO. Byla vypracována metodika pro zpracování vzorků osiv pro detekci GMO. Na přítomnost GMO bylo vyšetřeno 16 vzorků.
Monitoring pěstebních ploch‚ přenos a detekce transgenů geneticky modifikované řepky olejky a identita transgenů GM kukuřice

Cílem projektu je zjišťovat přítomnost geneticky modifikované řepky olejky na plochách, kde byla v minulých letech pokusně pěstována (přežívání semen a vzcházení výdrolu), a zjišťování případného přenosu transgenu na příbuzné plevely. Dále bude prováděna detekce transgenů v zeleném materiálu kukuřice pro potřeby kontroly probíhajících polních pokusů. Projekt navazuje na monitoring prováděný v uplynulých letech.

V laboratoři molekulárně biologických metod (LMBM) jsou uchovávány referenční vzorky pro laboratorní detekci GMO. Aktualizace přehledu metod pro průkaz a stanovení GMO a GM produktů pro MŽP a ČIŽP. Přehled referenčních vzorků uchovávaných na pracovištích SZÚ-CHPŘ v Brně, VŠCHT Praha, ÚMBR v Českých Budějovicích.
