Obmedzovanie škodlivej spotreby v Európskej únii pomocou daňových nástrojov

The diploma thesis is focused on consumption taxes in the European Union, their changes and impacts on limiting harmful consumption. The author of the diploma thesis examines the level and change of consumption tax rates in EU countries, the development of average and median wages, prices of goods of harmful consumption and the costs caused by harmful consumption. The main goal of the diploma thesis is to find out whether it is possible to effectively reduce consumption by increasing tax rates. The secondary goal is to define the amount of consumption taxes in the EU, to find out prices and wages. In the Czech Repub-lic, find out the level of consumption, calculate the elasticity of demand and compare the results with the results of a questionnaire survey. Based on the findings, evaluate the effectiveness of the tax policy and propose measures.

Černý, T. Motives of alcohol beverages consumption of Czech consumers. Diploma thesis. Brno: Mendel University, 2023. The diploma thesis deals with the motives of alcohol beverages consumption in the Czech Republic. The main objective is the identification of consumer behav-iour in connection with the alcohol beverages consumption. Using secondary data, the thesis evaluates the state of consumption in the world and in the Czech Repub-lic. The questionnaire survey and the testing of the dependence of qualitative characteristics were used to find out the motives of alcohol beverages consump-tion and for the consumer segmentation. Recommendations for the consumption reduction were based on the information found.

This bachelor thesis was elaborated in 2019 and 2020 at the Department of Post-Harvest Technology of Horticultural Products of the Faculty of Horticulture, Mendel University in Brno. Bachelor thesis deals with the division of microorganisms, description of their nutrition and reproduction, important genera in terms of both positive and negative. The influence of microorganisms for food industry and important fermentation processes for beverage industry is described. All important microorganisms for the production of wine, beer, spirits and milk fermented beverages are included. The work also follows the microorganisms, which cause various defects in the bev-erage.

The aim of the thesis was to process grapes of several vine varieties by two different methods and to prepare microsamples of distillates. Then by using chemical, physical and sensory methods evaluate and compare used varieties, technology of spirits production and selected quality parameters. The diploma thesis was developed in the years 2018 – 2020 at the Institute of Postharvest Technology of Horticultural products, at the Faculty of Horticulture in Lednice of Mendel University in Brno. Thesis describes the production technology, quality parameters and legislation of spirits from grapes and wines. The experimental part of the thesis is devoted to the production of these distillates and compares two methods of processing grapes for distillation. First method was preparing wine by traditional way, which is then distilled. Second method was an alternative approach, where the grapes was processed similar to fruits distillates, where the grapes are not pressed, but ferment on skins and distilled with them also.

Ševčovičová, M. Customer behaviour at market spirits. Bachelor thesis. Brno: Mendel University, 2016. The aim of the thesis is to investigate consumer behavior at spirits market in the Czech Republic and Slovakia. Consumer behavior and the factors that influence consumer are defined based on theory. In the empirical part the current state of the spirits market in the Czech Republic and Slovakia is described by means of orientational analysis. At conclusion the survey results are compared to previously described theory and to the current state of this sector. Subsequently, recommendations for entities operating in a given market are provided.
Dynamika změn senzorických vlastností destilátů během jejich skladování

The thesis is focused on the dynamics of changes in sensory properties of distillates during their storage. During the years 2017, 2018 and 2019, there were made regular sensory evaluations and refractometric dry matter measurements of domestic rum samples for 21 months. All samples were stored in different light and temperature conditions, also in different bottle colours. Descriptors describing colour, smell and taste were evaluated. Each descriptor was evaluated for intensity, pleasantness, and typicality. The experiment was divided into two parts according to the environment of the domestic rum. The first part dealt with differences in light effects. The samples were stored in the dark, in daylight and under the fluorescent lamps. The samples stored under the fluorescent lamp were worst assessed. In the second part of the experiment, the samples stored at different temperatures were compared with each other. Better assessments reached a sample stored in the refrigerator than the one at room temperature. No influence of the different environment was demonstrated for refractometric dry matter.
Změny senzorických vlastností lihovin vlivem vnějších faktorů

The theme on this diploma thesis is „Changes in sensory properties of spirits due to external factors“. In the theoretical part are contained chapters on the alcohol, production of alcohol and spirits. In the practical part, an experiment was established in 2017 in which the selected spirit drink was stored in two types of bottles under different storage conditions. The spirit drink used in the experiment was the domestic rum. The diploma thesis is focused on spectrophotoscopic measurement of samples of domestic rum, for which the intensity of color changes was monitored. In addition, a sensory evaluation of the colour intensity of the samples was carried out. The measurements were carried out for one year at regular intervals. The results is obtained were statistically and graphically evaluated. The results indicates that L*(D65) a*(D65) b*(D65) varied significantly over time under different storage conditions For samples stored at 6 °C, the L*(D65) gradients increased more slowly and valeus a*(D65) and b*(D65) were decreased slowier than those stored at 20 °C. The samples that were exposed to different light modes at 20 °C also increased value L*(D65) and decrease a*(D65) and b*(D65) values. The fastest changes to these values were in samples stored under a fluorescent lamp, then under daylight, and the slowest changes were in samples that were stored in the dark. By measuring, it was found that the bottle type had a demonstrable effect on the storage of samples exposed to different light modes. In all types of the samples, the total color differentiation ΔE* ab was calculated, indicating whether the difference in color was already visible for the human senses. This was confirmed by sensory analysis.

The bachelor thesis "Assortment and quality parameters of distillates made from grapes and other fruits" was elaborated at the Institute of Post-Harvest Technology of Horticultural Products at the Faculty of Horticulture Mendel University in 2018 and 2019. The aim of this thesis was to characterize various types of distillates from grapes and other fruits produced domestically and abroad. It describes the preparation of fruit for ferment using various preparations, the fermentation conditions, the distillation method and the subsequent distillate operation thereafter, taking into account legal restrictions, laws and regulations. It also defines the quality parameters of these distillates, procedures and principles for their sensory evaluation. Last but not least, it clearly displays the assortment of spirits and other spirits from Czech and Slovak producers in selected retail outlets.
Beer Consumption Patterns in Europe

This thesis intends to verify and quantify relationship between microeconomics, macroe- conomics and social variables with annual beer consumption per capita. To assess dif- ferences in tastes in groups of countries, the concept of beer, wine and spirit drinking countries is used to separate the influences. Firstly, the general model for all European countries is estimated with the use of panel data techniques on data from 2000 to 2013. The results and findings from the first model are subsequently used as a building blocks for specific model for The Czech Republic. The Czech Republic has over a long period the highest annual consumption per capita. Still the share consumed in hospitality expe- riences persistent downward trend. All data are collected on annual basis and with only country-aggregated level of detail.
