Analytické a senzorické hodnocení odrůdových šťáv z jablek

This diploma thesis deals with the sensorial and analytical evaluation of varietal juices from apples. All the juices were made from apples from the orchad of Faculty of Horticulture in Lednice. Together was assessed a total of nine varieties. The theoretical part of the thesis deals with the origin, distribution and utilization of apples in the processing industry, the technology of production of apple juice, its individual basic substance components, conditions and methods of sensory analysis of food. For all samples was carried out analytical and sensory evaluation. The juices produced were sensorially evaluated by the following parameters: appearance and colour, consistency, taste and aroma, intensity of taste after swallowing and overall rating. In the context of analytical reviews were established: titratable acids, soluble solids, content of total polyphenols, ascorbic acid and Malic acid content. The results obtained from the analytical and sensory evaluation were graphically and statistically evaluated.

Diploma thesis "Quality of the small fruits during the storage" follows up the characteristic of the different species of small fruits and less known species of small fruits and their substance composition, possibilities of quality rating and storing of these fruit species. The cornelian cherry fruits, varieties 'Vydubecký', 'Lukjanovský' and 'Fruchtal' and the rowan tree fruits, varieties 'Discolor' and 'Businka' and how do they behave during the storage was the main subject of the practical part. The cornelian cherry and the rowan tree fruits were storaged in two temperature variants (18 °C; 4,5 °C). The state of health, the fruits quality and weight loss were evaluated. The content of soluble dry basis, total acids and antioxidant capacity of the fruits were determined using the laboratory experiments.

The Diploma Thesis "Evaluation of tomatoes species with focus on technological features" at its literary part contains description of origin as well as a botanical characteristic of tomato, impact of consumption of tomatoes and products made of them on human health and structure of tomatoes´ substance. It also deals with the technology of growing, reaping and storing the tomatoes, the literature regarding mechanical features of tomatoes and the possibilities of their processing has been perused. Within the experimental part of the thesis there is the evaluation of individual species of tomatoes which are suitable for cannery processing conducted by appraising the cycle of reaping and quality of fruit (overall condition, crackle inclination, weight and dimension parameters, solidity, variegation, content of soluble solid, occurrence of acids, vitamins as well as amount of waste).

The literary part of the bachelor´s thesis comprises of material composition, the technology of production and forging of fruit juices. The research in this thesis is dealing with the analysis of 3 different kinds of fruit juice (apple, orange and grapefruit) purchased in a retail network. There have been evaluated 19 samples in total, in which density, soluble dry basis, titratable acids, malic acid, citric acid and ascorbic acid were determined. As samples were used fruit juices purchased in a retail network which were produced by pressing or from a concentrate or from fresh fruit. Obtained results were compiled to a table, compared with allowed values from the AIJN codex and evaluated.

In this diploma thesis "Ripening tomatoes from the late harvest" were investigated supporting options of the post harvest of the completely green fruit, which remained unharvested in the later stages of harvest. Fruits were transferred from the field conditions to the temperature of 20 °C and afterwards were successively treated with ethylene as the supportive maturing factor, which helped them to get to the suitable conditions for subsequent maturation. Two varieties of tomatoes were used for the speed of ripening. At the end of the cultivation period, both varieties of tomatoes 'Expres' and 'Premio' were treated by the three concentrations of exogenous ethylene, 2 100 ppm, 7 360 ppm and 2 200 ppm. Technologically important parameters such as the size and weight of fruit, fruit color, fruit firmness, soluble solids and titration acid were evaluated during the post-harvest storage (21 days). Influence of ethylene in concentrations up to 7 360 ppm has proven effective post-harvest treatment that supports ripening of originally unripe fruit at the end of the growing season. Also differences in the investigated varieties were proved, the 'Premio' variety was after the ethylene treatment sensitive in parameters, which were monitored.

They were evaluated for the degree of maturity of three varieties of peaches. They were select varieties of peach Royal glory, Redhaven, and Flamingo. Fruits were collected at three intervals and in an immature stage, perfectly ripe and overripe in the period from 10.7. to 1.9. 2014 in orchard Horticultural faculty, in Lednice. Ripening peaches on the tree took place spontaneously. At the plant material was determined by the weight, the proportion of the wallop and pulp, firmness fruit, content titratable acidic, soluble solids content and sensory evaluation was carried out. Subsequently, was performed correlation analysis of measured parameters.

The bachelor thesis ,,Quality of small fruits during storage" is dealing with the description of particular kinds of fruit, substance composition, technological parameters, ways of harvesting and occurrence of diseases and pests. Part of the thesis is designated to the possible means of storage of small fruits, description of technologies focused on controlled atmosphere and ULO. Two of the currant cultivars (Trent and Detvan) were observed, during the time of the storage, in the practical part of the thesis. Atributes in differences assessed, were concerning if the fruits were treated with ozone, the state of health of the fruits and the controll of mass decrease. The content of soluble dry basis was deremined by labaratory experiments.
Možnosti využití plodů druhů čeledi Cucurbitaceae pro zpracovatelské účely

he bachelor work dealt with the evaluatino of selected sterilized cucumbers from the laboratory and sensory aspect, and the evaluatiomn of cucumbers and watermelon from the qualitative aspect. In the literary part was described a classification systém and techniques of cultivation of individual families Cucurbitaceae, their substantial structure, individual standards of quality and mehods of storing. Then, the literary part introduced the general overview of canning processing and mentioned the techniques of processing of the individual Cucurbitaceae families. In the practical part were selected five different sterilized cucumbers. From the laboratory aspect, the pickle and solid proportion were evaluted by the qualitative method, the contents of acid by titration, the dissoluble dry substance by rafractometry and the contents os acid by titration. By sensory analyse were evaluted the colour and the shape of fruit, the visual aspect of pickle, consistence, aroma, taste and the ovarall impression. According to the standards of quality control the length and weight of individual fruits were evaluated.
