Design and developement of autonomous system for monitoring critical paramaters in food industry

his work focuses on automating the monitoring of temperature and other operational parameters in gastronomic establishments. The designed device allows real-time monitoring of temperature, humidity, and other parameters with remote access capability. It utilizes the ESP32 microcontroller, SHT40 and HX711 sensors, and TP4056 charging circuit with DW01A protection circuit. Data is transmitted to a Gateway device, which displays it through a web interface. Testing demonstrated sufficient communication range and long battery life. The device meets requirements for compactness, reliability, and efficiency. This project represents progress in IoT applications for ensuring food safety and efficiency in handling food in gastronomic establishments.
Zdravotní gramotnost populace v prevenci alimentárních nákaz

The bachelor thesis called "Health literacy of the population in the prevention of foodborne diseases" deals with diseases caused by food contaminated with microorganisms and their prevention. The theoretical part includes characteristics, distribution of foodborne diseases, definitions and detailed description of selected diseases. The next section describes the causes of foodborne infections and their classification into three groups: poor personal hygiene, multiplication of micro-organisms and contamination. Food safety and the importance of hygiene measures, guidelines and legal standards that need to be known in order to prevent these diseases are also described. The last part of the bachelor thesis defines the duties of food service workers. The subject of research of the practical part is the health literacy of workers in closed and open mass catering establishments who are involved in the preparation of food and therefore work in activities of epidemiological importance according to the Public Health Protection Act. The survey maps their knowledge of good hygiene practices in food preparation, distribution and storage. The second part of the practical part consists of the analysis of menus from selected establishments and their analysis in the NutriServis application. The results showed that health literacy in preventing foodborne infections is good. They are aware of epidemiologically relevant activities, terms and laws related to them. Again, these respondents have a good understanding of personal and operational hygiene, compliance with food preparation rules, and institutions dealing with, for example, emerging epidemics of alimentary diseases. The second part of the bachelor thesis focused on the evaluation of the weekly menu and the analysis of potential risks of foodborne illnesses. It was concluded that undercooked meat, meat products, eggs and unwashed fruit and vegetables could be the greatest risks.

Food safety during import from third countries

This Bachelor thesis deals with an issue of import procedure from third countries, focusing on the legislation of import into the European Union. The work is divided into two parts: theoretical and practical. The theoretical part aims to analyse the legislation and other formalities associated with the food imports, as the process of the customs procedure and a development of food safety in the Czech Republic and the European Union with the relevant institutional and legislative background. The practical part contains a case study, which is focused on the correct procedure of importing food, that serves to clarify the whole process, including necessary documents and the analysis of risks associated with it. The conclusion of the thesis contains an evaluation of the findings and its critical points.
Evaluation of the level of contamination in fish by non-tuberculous mycobacteria

The aim of a presented diploma thesis was to evaluate the level of contamination in fish by nontuberculous mycobacteria (NTM). Methods of molecular biology were used to monitor the incidence and distribution of NTM in tissues of freshwater fish (gills, pharyngeal teeth, muscles, intestine etc.). NTM frequently occur in aquacultures for commercial use. With this in mind the occurrence of NTM was monitored in fish meat (Ctenopharyngodon idella, Cyprinus carpio, Tinca tinca, Sander lucioperca, Oreochromis niloticus etc.) from the market, because processing and consumption of insufficiently heat treated meat contaminated with NTM may pose health risk to humans. The theoretical part deals with the description of mycobacteria, their clinical significance and responsibilities in food safety. There are summarised methods for detection and identification of individual mycobacterial species. The experimental part is devoted to the description of used methods followed by evaluation of experimentally obtained data. The plasmid DNA was prepared as positive controls for PCR reaction. Furthermore, the analytical sensitivity of PCR reaction and efficiency of isolation of mycobacterial DNA isolation from fish meat were determined. Lastly, the level of NTM contamination in fish was evaluated.
Mikroplasty v mořských plodech a jejich dopad na lidské zdraví

This bachelor thesis summarizes current knowledge regarding the accumulation of microplastic particles in the marine fauna and their impact on marine organisms. The uptake of microplastics has been demonstrated in laboratory and natural conditions in various marine organisms, including zooplankton, oysters, mussels, and shrimp. Microplastic particles are transferred from lower to higher taxonomic levels through the food chain via trophic transfer. The model transport within the food web was studied in a marine crab that was fed with mussels contaminated with microplastics. Microplastic fragments were able to penetrate from the crab's gastrointestinal tract into surrounding tissues. Microplastics are receiving a lot of attention in research as potential carriers of dangerous chemicals. The consequences of microplastic contamination on the food chain and human health are not sufficiently explored and require further study.

Vývoj potravinové bezpečnosti ve vybraných zemích jihovýchodní Afriky

The diploma thesis deals with monitoring the development of food security in Malawi, Zimbabwe and Zambia. The specific criteria for the selection of three states were the HDI indicator and the geographical location of the selected states. Through individual indicators from different pillars of food security, the work evaluates the most significant factors that cause food insecurity in the monitored countries. The theoretical part of the thesis explains the basic facts and the background of the problem, contains an explanation of key terms and terms, and defines individual causes and consequences of food security at the level of selected countries. The work also describes the most used indicators measuring food safety. The practical part based on the development of monitored indicators (average protein intake; average protein intake of animal origin; prevalence of moderate or severe food insecurity; prevalence of severe food shortage; percentage of the population using basic hygiene services; percentage of the population with access to drinking water; percentage of children under 5 years, suffering from stunting; prevalence of anemia in women of reproductive age; variability of food production per person; political stability and absence of violence/terrorism) in the period 2009-2019 examines the factors that influenced changes in these indicators. In the work, it was found that the most important factors influencing the development of food security in the observed states of Malawi, Zambia and Zimbabwe are climatic conditions, political and economic situation, low education of the population and infectious diseases. These factors slow down the economic growth of countries and prevent growth from developing to developed countries and result in food insecurity and consequences.
Assessment of the environment hygiene level in selected food establishments and households

An adequate level of hygiene of the food handling environment is one of the important factors that influence the maintenance of food quality and safety. The aim of this thesis was (i) to assess the level of hygiene in selected households (n=3) and food processing establishments (n=3) by microbiological analysis. The microbiological analysis included the determination of: total aerobic and psychrotrophic microorganisms, coliforms, as well as yeasts and moulds. In addition, (ii) to examine information regarding food handling practices through a questionnaire survey of food establishment employees (n=50) and the general public (n=259).
Consumer protection in articles of food

This thesis describes the rights and obligations of consumers who are the part of the international trade. It focuses on consumers protection of the Czech Republic and the European Union. Legislation of the country should be able to ensure food safety. The consumer protection law ensures consumer protection in the Czech Republic and provides help with business practices such as unfair commercial practice. There are also supervisory authorities in the Czech Republic for example the Czech Agriculture and Food Inspection Authority and The State Veterinary Administration. These supervisory authorities supervise food safety. In the twenty-first century more people trade online with less personal interaction. The quality of consumer information and their knowledge becomes very important. The marketing research aims to analyse consumer protection in articles of food and find out the level of knowledge of food law. A research instrument is a questionnaire. The thesis includes a summarization of the work results.
