High-speed Imaging of Beer Foam Formation: Effect of Surfactants

In this experimental study we developed a visualization method based on the high-speed imaging technique. The method consists of application of high-speed digital camera and image analyzing software. The method is suitable for investigating the mechanism of bubble formation (nucleation) and collision of bubbles with liquid surface. The supression of bubble coalescence, whence foam formation, was tested on different samples of model liquids and beers differing in surfactant content.

The dependences of the volumetric liquid-side mass transfer coefficient, kLa and the gas holdup on gas superficial velocities (0.01-0.20 m s-1) in coalescent and non-coalescent media are presented. The effect of coalescence on kLa values and gas holdup in heterogeneous bubbling regime is discussed. The empirical relations for limiting dependences of kLa and gas holdup values for electrolyte addition in bubble column obtained from experimental data are presented.

This contribution deals with the dynamics of the penetration of the fine thin sharp tip of a optical fiber probe with the gas-liquid interface at a surface of a gas bubble freely moving in a liquid. Simple experiments were performed where the process under study was monitored with help of two independent sources of information, employed simultaneously.

Subject of present work is a turbulent circular air free jet, which issues from a bell-shaped converging nozzle. The aim of the investigation is comparison of the different turbulent models proposed for the unsteady modelling of turbulent air jet issuing to the still surroundings and model validation by hot-wire anemometry velocity measurements.

Hydrodynamika bubliny narážející na stěnu. Experiment a modelování

The contribution deals with both experimental and theoretical investigation of collision of a bubble with a horizontal hydrophobic (glass) surface. The terminal bubble velocity, impact velocity, contact time of bubble with the wall and restitution coefficient (ratio of restitution and terminal velocity) are evaluated (by means of a high-speed camera) as a function of bubble size, which is ranging from 0.34 to 2.07 mm. The experimental results are compared with the models based on a balance of forces acting on a bubble during the interaction process. A good agreement is showed between the experimental data and theoretical predictions.

Present contribution addresses some aspects of the behavior of a bubble chain composed of bubbles with Re in the range (based on the terminal velocity of single bubble). Bubble chains were created using bubble generator with oscillating needle or acoustic bubble generator. These devices enable to create bubble chains with different initial spacing and bubble diameter. Air bubbles were rising in various liquids as ultrapure water, silicon oils and ethanol.
