Probiotics and probiotic microorganisms
Kostková, Lucie ; Dvořák, Miloš (referee) ; Babák, Libor (advisor)
Probiotics and their positive influence on human health are presently very discussed theme. Nevertheless is informedness of public about probiotics benign influence insufficient, as well as their practical usage. This thesis summarizes present scientific knowledge about probiotic effects on human organismus. Fisrt chapter deals with determination of concept probiotics, their history, meaning, qualities, effects on human health and hazard connected with probiotic usage. Second chapter includes description of probiotic products, their forms and foodstuff containing probiotics. Chapter three discuss probiotic microorganisms, their main characteristics and examples of commercial starting cultures. Fourth chapter takes in informations about viability of probiotic microorganisms. And last chapter researches methods of integration of probiotics into products.
Technology of fruity baby food and its monitoring
Gállová, Eva ; Babák, Libor (referee) ; Vitoulová, Eva (advisor)
This bachelor thesis is showing technological procedure of fruit baby food production and its monitoring. It specifies the list of used fruits and ingredients for the production. It analyses particular pocedures of stuff processing and and production process from bringing the stuff to the factory to ready products delivery. It analyses toxic impacts and contamiators checkout as well, that may appear in fruit baby meals. There is a legislation part concerning manufacturing process of agricultural production and food inspection of Czech republic that showed defects on baby ready meals.
Lactic acid bacteria and their utilization
Jiříková, Ivana ; Vránová, Dana (referee) ; Babák, Libor (advisor)
This bachelor thesis is aimed at the study of lactic acid bacteria. Within the frame of this thesis I have performed a literature research into findings about these bacteria. The first section is focused on the general bacteria identification and division into separate genus groups. It also describes the cytology, metabolism and industrial use of milk fermentation bacteria.
Extremophilic microorganisms
Procházková, Lenka ; Vítová, Eva (referee) ; Babák, Libor (advisor)
This bachelor’s thesis deals with the extremophilic microorganisms. There is described extreme environment in which these microorganisms occur, as well as several structural and chemical adaptations to the environment. In most cases, adaptation to extreme environment requires changes in the composition of membrane lipids, nucleic acids and proteins. Enzymes with stability in extreme environment are used in chemical, food, pharmaceutical and textile industry. There is also mentioned the application of extremophiles in the biodegradation of organic materials. This bachelor’s thesis is mainly focused on hyperthermophilic microorganisms, which have been most researched.
Raw materials and microorganisms to distilled beverage production
Jechová, Iva ; Vitoulová, Eva (referee) ; Babák, Libor (advisor)
The production of distilled ranks among established fermentative production. Than the first – quality spirits is became from raw material, it is obliged to change ranks processes. The important from the processes are alcoholic fermentation, which proceeds owing to mikrobiological cultures, distillation and subsequent rectification and at not least ranks aging distilled, for which is necessary selected appropriate container. For all processes the granted conditions are appointed, under which the processes would ocur, so resulting distilled achieved the first – quality and the best sensory character. Therefore this work does one’s best map these single processes and it is largely intent on fermentative processes.
Thermophilic Enzymes
Kuchtová, Ludmila ; Obruča, Stanislav (referee) ; Babák, Libor (advisor)
Thermophilic enzymes are produced by organisms living at temperatures between 60 and 80°C, in some cases even higher, and are active and stabile at these temperatures. This work deals with thermophilic and hyperthermophilic organisms, their habitats, ways of adaptation to environment with considerably higher temperatures than optimal temperature for most organisms, and recent findings and opinions about possible factors enhancing protein thermostability. Properties and behaviour of thermophilic enzymes and their current applications (i.e. PCR, starch industry) are summarized. Advantages and disadvantages of using of these enzymes in comparison to currently used mesophilic enzymes are compared. Possible applications of thermozymes in various industrial branches, where they could replace some environment polluting procedures, simplify technology and be economically important, are introduced.
Thermophilic microorganisms
Sůkalová, Kateřina ; Vránová, Dana (referee) ; Babák, Libor (advisor)
This bachelor’s thesis is focused on distribution thermophilic species from among microorganisms, characteristic important genera, in which these microorganisms we can find and detailed description choice species. There is described origin of thermal environment and locations of habitation thermophilic microorganisms with intention on geothermal areas, where is found the biggest number of these species. In consequence of thermal stability of enzymes these microorganisms are used in food industry, in waste treatment, in medicine and for their production of thermostabile enzymes.
Degradation possibilities of synthetic macromolecular materials centred on biodegradations
Zichová, Miroslava ; Ondruška, Vladimír (referee) ; Babák, Libor (advisor)
This work deals with the degradation possibilities of synthetic macromolecular materials. Mechanical, chemical and chemo-physical degradation is described, but the work is focused on biodegradation. Polymer biodegradation is its decomposition by microorganisms. The aim of the work is to show the advantages of biodegradation and to arrange the knowledge acquired about the biodegradation of particular macromolecular materials. There is resumed the information about the degradation of polyurethanes as an exception among synthetic polymers, which are mostly resistant to biodegradation. Attention is also paid to biodegradable polymers.
The control of DIZZY orange juice authenticity on the basis of selected chemical properties
Drahovzalová, Kateřina ; Babák, Libor (referee) ; Hrstka, Miroslav (advisor)
This study deals DIZZY orange juice authenticity on the basis of selected chemical properties. The theoretical part is focused on the basic terms concerning the orange juice, legislation in the EU, legislation in the Czech Republic and methods, which determine the authenticity of orange juices. In experimental part I made selected analytical methods to determine the authenticity of DIZZY orange juice. The results showed that DIZZY orange juice was authentic.
Agrobacterium tumefaciens application
Kováčová, Viera ; Burdychová, Radka (referee) ; Babák, Libor (advisor)
This project focus on biotechnologic applications of bacterium named Agrobacterium tumefaciens, which is capable to mediate genetic transformation not only for plants. Main points of project are divided between description of basic natures and cytology of A. tumafaciens following by overview of usage A. tumefaciens in methods of modifications of diffrent cells. Target of paper about biotechnologic use of A. tumefaciens is confrontation of effectivity of this method of modification with else, summary of positiv benefits of its using for future development of human population and introduction of fundamental transformation methods of modification most important crop plants. Final part of project is brief summation of basic statement from statistics and legislature of genetic modified crops.
