Nutritional deficiences in vegan endurance athletes

Aim: This study aimed to investigate whether vegan endurance athletes, specifically runners, experience nutritional deficiencies due to a purely plant-based diet. Partial goals were set to evaluate whether these athletes have sufficient energy intake and receive adequate macronutrients and risky micronutrients. Methods: The research was conducted as a pilot study for the extensive European project VEGANScreener. Based on the completed questionnaire and meeting the criteria, 11 participants (n = 11) were selected. The subjects underwent body composition analysis using bioimpedance, their resting energy expenditure was measured by indirect calorimetry, and blood was taken. The subjects then performed a 4-day food record (self-reported 4-day Dietary Record), which was analysed using new software. The complete dietary record was analysed for only eight subjects (n = 8). Nutritional data were analysed using the left-sided Mann- Whitney U test, which belongs to the group of non-parametric tests. The test was conducted at a significance level of α = 0.05. Results: The average BMI of the subjects was 20.87 ± 1.58 kg/m2. Two subjects (n = 2) had a lower body fat percentage than is adequate. This bachelor thesis is focused on the eating habits of vocational high school students. The work consists of two parts, theoretical and practical. The aim of the theoretical part is to describe the diet of students in the school cafeteria and the specifics of adoles-cents’ diet, further to define terms such as consumer basket, veganism, vegetarianism, food allergies, food pyramid, etc. The methods used in the theoretical part are a review of scientific literature, creating notes, followed by their analysis and synthesis. In the practical part, the aim is to elicit the degree of satisfaction of students with the offer of food in the school cafeteria. We are also interested in aspects of the motivations of students to eat in the school cafeteria, whether they are satisfied with the choice of meals or what meals they would welcome, as well as what are the meal choices for stu-dents with special eating habits. A quantitative strategy and a questionnaire method were used. The questionnaire was designed for the purposes of our survey. The respond-ents are students of a selected high school in South Moravia. The results are presented in tables. The conclusion of the bachelor thesis contains the results, the literature used and appendices. Conclusions and draft recommendations for pedagogical practice are formu-lated.
Risks of vegan diet

Veganism, in the last few years more and more popular way of eating, is sometimes presented by non-academic articles as "the best" and without risks. However, compete omission of all animal products doesn't have to be as safe as it seems at first sight. The aim of this thesis is to find out what is the knowledge of vegans about the risks of fully vegan diet and also what are their eating habits to eliminate those risks. The theoretical part is mostly focused on risks related to deficiency of essential nutrients. The practical part was focused on research, that was made by anonymous quantitative survey method. The questionnaire was composed of sixteen questions oriented mostly towards knowledge of risks of vegan diet as well as towards eating habits of respondents. A total of 187 respondents met the criteria necessary to be included in the research. The results showed that 80,7 % of vegans know that there are some risks connected to vegan diet. Those respondents had quite good knowledge about the risks summarised in theoretical part of this thesis. Mostly they underestimated the risks of deficiency of omega 3 fatty acids, vitamin D and generally the risk of mineral's deficiency. Alternative nutrition - use and knowledge of PF JU students

The bachelor thesis deals with alternative nutrition and examines the knowledge and its use among students of the Faculty of Education of the University of South Bohemia. The theoretical part deals with basic information about alternative nutrition and discusses possible reasons leading to dietary change. It also describes in more detail the different alternative ways of eating. The most well-known dietary trends among students are vegetarianism and veganism, for which the pitfalls and possible deficiencies in the diet are discussed in detail. The practical part elaborates the students' knowledge and opinion on alternative diets, the relationship to healthy eating and the use of dietary supplements. In addition, it evaluates the representation of different alternative diets, the reasons leading to dietary changes, the perceived changes, or the ways for obtaining nutritional information. The results are based on a questionnaire survey with a total of 101 respondents. Of the total number of respondents, 10% of the students were vegetarian. Other alternative forms of nutrition are less represented. The Mediterranean diet fared best in terms of health benefits in the evaluation of alternative forms of nutrition. However, none of the students surveyed follow its recommendations.
Veganism and its possible impact on organism

This thesis is called Veganism and its Possible Impact on the Organism. People who opt for a vegan diet should have extensive knowledge of this diet, as ignorace could bring many health risks. In the theoretical part of my work, I deal with the concept of veganism, what a vegan diet entails, possible reasons for choosing this type of diet, and the characteristics of the food vegans consume. I then focus in more detail on nutrients that do not occur in the vegan diet, or they occur in significantly smaller amounts, and also where to find them in the diet. I deal with their recommended daily intake and describe the consequences of a deficiency of some of the nutrients. In the practical part of the thesis I set two goals, the first of which was to map the respondents' knowledge of potentially hazardous nutrients in the vegan diet, and the second goal was to evaluate whether the vegan diets of selected respondents meet their energy and nutritional needs. To complete the first goal, I used my questionnaire, which was filled out by 73 people over the age of 15 following a vegan diet. To meet the second goal, I randomly selected eight respondents from the questionnaire who recorded their diet for seven days for my research. Subsequently, I processed their daily menus in the Nutriservis Profi program and compared the resulting values of energy and macronutrients with their recommended daily intake. According to the results, respondents have certain knowledge of the vegan diet, but within the individual questions there are also some wrong answers. On average, the energy intake of selected respondents was lower than their recommendations. Furthermore, the composition of the diet did not match the daily recommendations, average protein values were higher in contrast to fast and carbohydrates, which were significantly lower.
Parents of vegan children and adolescents awareness about the main principles and risks of vegan diet

Veganism is a way of life based on the effort to eliminate or reduce as much as possible any form of exploitation and abuse perpetrated on animals for human needs. From a dietary point of view, we use the term veganism to exclude all foods of animal origin from the diet. Plant-based diets bring indisputable health benefits, but there may also be certain risks that need to be avoided. In recent years, interest in this lifestyle has increased and we are increasingly encountering it among children, even the youngest, who are particularly prone to health problems resulting from dietary errors. This work is divided into theoretical and practical parts. The theoretical part contains information about the diet during pregnancy and lactation, in childhood and adolescence. Furthermore, attention is paid to veganism, especially from a nutritional point of view. The possible risks of plant diets in children and the recommendations and attitudes of health organizations are presented. The main goal of the practical part of the work was to map what awareness of the mentioned risks and recommendations parents of vegan-eating children and adolescents have and whether they also follow the recommendations in practice. Transfer of Vegetarian Value Model from Parents onto Their Childern

This bachelor's thesis is, as the itself name indicates, concerned with the concept of education of children by their parents - vegetarians, possibly vegans. What is examined is whether they are trying to transfer their own model of values - vegetarianism or veganism onto the child, but also what aspects will influence their future value orientation the most during the course of their primary socialisation. The influence of the informing parent's partner as well as that of grandparents on both sides is considered, further on the influence of the educational institution the child attends is factored in. It is there where the child is confronted with different norms and values than those that the child can be familiar with from the home and parents are then have to resolve the arisen situation. The thesis itself is divided into three main sections which are the following: Theoretical Introduction, Methodology and Research.The first section is dedicated to the theoretical background enabling the confimation of data necessary for the analysis itself. Specifically it outlines the value basis of vegetarianism, explains the difference between vegetarianism and its more radical form veganism.
