It describes basic breeds of sheep reared for milk production, the current situation of sheep in the Czech Republic and in the European Union, production and chemical composition of sheep 's milk. In the next stage are described the basic information about the individual vitamins and minerals and their effect on human health. At the end of work is comparison of these vitamins and minerals by various literary sources.

My Bachelor's composition is related to Mineral substances and vitamins contained in goat's milk. I'm evaluating goat farming situation not only in the Czech Republic, but also in Europe and worldwide based on available literary sources. Sources of individual vitamins and mineral substances in other food, their daily recommended allowances and their importance for human being are described in there. Bachelor's composition is aiming to familiarize readers with ingredient proportional representation issues in goat's milk depending on several factors, whose contains may vary. Vitamin B12 is representing the smallest amount, the other way around niacin and vitamin B6 concentration represents the highest amount in goat's milk. From the point of view of Mineral substances, goat's milk is rich in Calcium and Potassium and low in Jodine and Selenium concentration.

Goal of this thesis, Evaluation of the eating habits of pre-school children, is to research eating habits of children in pre-school age and of their parents, whether parent's eating habits influence those of children. Another goal is to evaluate a week long menu of kindergarten. The contents of theoretical part are anatomy of digestive system, metabolism of proteins, fats, carbohydrates and their significance, vitamins and minerals necessary for proper growth and development of children, eating habits of pre-school and school children and a chapter about obesity. Practical part contains quantitative research based on a questionnaire and energy calculation of weekly menu kindergarten.
Comparison of individual species and groups of fruit in terms of content and properties of nutritionally valuable components

The work deals with the content and features of nutritionally valuable fruits constituents and detects the frequency of its consumption among secondary school students. The theoretical part deals with the basic breakdown of fruit with a description of important species of each group. There are also distributed and described, given the importance in human nutrition, most nutritionally valuable components of fruits - vitamins, antioxidants, minerals, roughage, carbohydrates, proteins and lipids. The practical part deals with the comparison of individual fruits in terms of nutritionally valuable constituents. When comparing nutritionally valuable constituents of fruits was found that nuts exhibits considerably higher amounts of vitamins, minerals and lipids than other group of fruit. This section also contains a survey related to questions about the frequency and popularity of eating fruit in secondary school students aged 17-20 years. The results are analyzed and graphically displayed. Research shows that 98 % of students likes fruit and prefer to eat it fresh. Their favorite kind are apples, which are our most usual fruit. In contrast, the fruits that students do not like to include grapefruit and currant. According to the survey, students understand the importance of fruit in the diet to their health, but it is important to pay attention constantly to have a varied diet in adolescents.
The Methods for the Detection of Antioxidant Substances

Antioxidants and free radicals are widely discussed in the clinical and nutritional literature. Various reactive oxygen species (ROS) may be produced from normal biochemical, essential metabolic processes or from external sources as exposure to a variety of agents presented in the environment. Lipids, proteins, carbohydrates and DNA are all capable of reacting with ROS and can be implicated in etiology of various human disorders. The antioxidant system protects the organism from the effects of free radicals by scavenging them and thus preventing structural damage of cells. Measuring the individual components of the antioxidant system has provided important information about the defences against free radical effect. During the last decade, many analytical methods have been developed to determine the antioxidant activity of natural compounds and their mixtures in vitro. Some procedures involve the methods based on the generation of various radical species and their elimination by treatment with potential antioxidant compounds. The tests used for the evalution of total antioxidant activity are: Trolox equivalent antioxidant capacity-TEAC, diphenylpicrylhydrazil - DPPH, oxygen radical absorbance capacity-ORAC and the methods testing the ability to prevent lipid peroxidation. The other group includes the procedures that are based on measurement of redox properties of compouds (ferric reducing antioxidant potential assay-FRAP, cyclic voltammetry, HPLC).
The market of food supplements and their trustworthiness

The bachelor thesis deals with the market of food supplements and their trustworthiness. The aim of this thesis is to inform about the current situation on the market of food supplements in the Czech Republic and abroad, to highlight the importance of consumption of food supplements and to present conclusions obtained during a personal survey. The work could be divided into two parts, the first part is theoretical and the second one practical. The purpose of the first part is primarily to introduce the topic of food supplements and to provide information about the market of the food supplements as well as about the food supplements themselves. The practical part provides information about shopping behavior of customer and about his general knowledge in this area.
Functional foods in human nutrition

Bachelor thesis deals with functional food and their role in human nutrition. The history of functional food, their characteristics, components, evaluation of individual species and the impact on the health of the consumer is described here. A lot of researches are focused on the topic of functional food, but no legally definition have been established yet. Even in the Czech Republic or the EU. Only the certain designations are used, which have a small deviations in different countries. Functional foods can be formed in different ways. It´s the elimination of certain harmful substances, a modification, but the most commonly used method is to add some substance to food. These substances may have various origins. The most commonly used are probiotics and prebiotics, antioxidants, anticarcinogens, fiber and many more. As the types of functional food there are mentioned cereals and products made from them, as well as meat and meat products, fruit and vegetables, vegetable fats, foods from stevia and very important probiotic food. Then the study focuses on the behavior of these types of food in prevention of civilization diseases, namely diabetes, obesity, hypertension, non-alcoholic fatty liver disease and the Alzheimer´s disease. Subsequently, this section deals with the importance of functional food for particular population groups. Attention is given to children, the elderly, pregnant women and athletes.
Sources and methods of saturation of the organism with antioxidants

The aim of the thesis is to characterize sources of antioxidants and inquire the depth of knowledge about antioxidants among students of secondary school. The theoretical part of the thesis describes and divides important antioxidants for human health. The main sources of antioxidants in human diet are there divided, described and compared as well. The practical part of the thesis includes the inquiry which evaluates the theoretical interest in antioxidants and dietary intake of antioxidant supplements among 17-19 years-old secondary school students. The results are analyzed and graphically displayed. Research shows that more than a half of the respondents know the term antioxidants and consume these substances in the diet. However, it is important to increase knowledge of antioxidants already among young people and ensure the intake of these essential substances from a varied diet.
Antioxidants in Food and Their Function in the Process of Defence Against the Free Radicals Effects

The thesis deals with antioxidants in food and their function in the process of defence against the effects of free radicals. At first, antioxidants are defined and their clasification is described in the theoretical part. Then this part deals with antioxidants in food, their effects on people´s health and antioxidants recommended daily doses. Possitive and negative effects of free radicals on people´s health and their relation to antioxidants are mentioned next. In the practical part, I concentrate on the survey focused on the investigation of the population awareness of antioxidants and their effects on health. One hundred and sixty respondents took part in the survey. They were devided into two groups; working people and pensioners. The questionnaire contained twelve questions which investigated the population awareness of the topic. The data collection took place in January 2013 and it was evaluated in February 2013. The collected data were evaluated according to basic statistical methods. The ascertained answers were put into unified tables and then they were compared. Especially, the general awareness was investigated and then the effect of education on the knoledge of the topic was considered.
