Srovnání pivovarských a vinných kmenů kvasinek v různých fermentačních podmínkách

The thesis on the topic Comparison of brewer’ and wine’ yeast strains in various fermentation conditions has been prepared at the Department of Postharvest Technology of Horticultural Products at the Faculty of Horticulture, Mendel University in Brno in 2019/2020. The thesis deals with the taxonomy and the properties of yeasts and their useage and focuses mainly on brewer's and wine yeast strains. In the practical part, the analytical parameters of wort fermented by selected brewer's and wine yeast strains have been evaluated and compared. By these yeasts their influence on the sensory quality of the produced beer has also been evaluated.

Title of diploma thesis: The impact of synthetic chelators from the group of 4-acylpyrazole-5-ones on alcohol dehydrogenase Inhibitors of alcohol dehydrogenase play a key role in the treatment of poisoning caused by methanol, ethanol, ethylene glycol, and their toxic metabolites. Such treatment can therefore be considered as life-saving. In clinical practice, a single substance, fomepizole, is used. This thesis is aimed at investigation of the effect of eleven experimental chelators from the 4- acylpyrazol-5-ones group on equine and yeast alcohol dehydrogenases, and the possible definition of structural features that would be the most suitable for interaction with this enzyme. Due to the ability of these substances to chelate zinc ions, it is believed that they could inhibit an enzyme that has a zinc molecule in the structure. The measurement itself is based on principle of increase in absorbance during the enzymatic reaction, which is caused by the formation of NADH. Knowledge among adolescents at a select high school about the effects of alcohol on the human body and their experience with alcohol use.

This diploma thesis concerns the most used drug, alcohol. The theoretical part consists of chapters concerning alcohol characteristics, pharmacology effects of alcohol consumption on the human body, and alcohol consumption by youths. Moreover, the thesis defines addiction and focuses on drug issues and their prevention. This diploma thesis mainly aims to reveal the knowledge of alcohol effects and consequent risks of high school students in all years based on the number of correct answers. The minor aims are to find the comprehension of given students in alcohol law, the first experience with alcoholic beverages, the frequency of alcohol consumption in the previous 30 days, and the way of alcoholic beverages providing. The aims have been assessed based on a questionnaire focused on alcohol knowledge and alcohol consumption. According to the questionnaire findings, the students appear to have a decent knowledge of alcohol's effect on the human body and the consequent risks of alcohol consumption. Also, most of them have already had an experience with alcohol. Furthermore, the practical part incorporates an interactive lecture proposal focusing on alcohol and its consequence on the human body. Alcohol intake of athletic university students

The topic of my bachelor's thesis is "alcohol intake of athletic university students." The rate at which alcohol is broken down depends on a number of physiological differences, such as gender or the proportion of muscle and fat tissue. Despite its certain protective effects, consumption cannot be recommended - especially in combination with sport. In the practical part, a quantitative method of data collection was used. The research group consisted of 128 university students aged 18-30. The aim was to compare the different alcohol consumption of athletic and non-athletic students. The results of both groups were very similar. The most frequently chosen option was "I consume alcohol only occasionally (about twice a month)", as it was chosen by 40% of sports and 33.3% of non-sports respondents. This was followed by consumption 3-5 times a month, which was chosen by 36% of athletes and 41% of non-athletes. There was a higher frequency of consumption (several times a week) in the case of 18% of athletes and 16.7% of non-athletes. The last 6% of sports and 9% of non-sports respondents consume alcohol every day. Another aim was to examine the degradation of alcohol from the system. I tested 20 students (10 athletes, 10 non-athletes) by using an alcohol tester. Athletic men eliminated a dose of 40 ml of 34% distillate within 30 minutes. Non-athletes in double time, i. e. 60 minutes. All women eliminated the same dose of alcohol within a similar period of time (60-105 minutes), regardless of the level of their physical activity. All participants also provided a weekly dietary record, including alcohol consummation. After entering dietary records into the Nutriservis program, I came to an average energy intake and the representation of individual nutrients, which can also affect the degradation itself.
Experiences of adolescens with alcohol and easy access to it

The bachelor thesis is divided into theoretical and practical parts and focuses on the experiences of adolescents with alcohol and easy access to it. The theoretical part presents the terms "addiction" and "alcohol" and their types and forms. Next the theoretical part discusses the accessibility of alcohol to underage drinkers in three fields - home, stores, and social groups and then focusses on media glorification divided into television, music, and social networks. The theoretical part is closing with "consequences" and "prevention". The practical part is using a quantitative survey using the form of a questionnaire, which focuses on the experiences of adolescents and their opinion on alcohol consumption.
The effect of addictive substances on the nutritional status of patients

This bachelor's thesis looks at the influence of addictive substances on a patient's nutritional status. The aim of this work was to map the nutritional status of patients using addictive substances and any change in nutritional status during treatment. The theoretical section looks at the characteristics and distribution of addictive substances, the outcome of their effect on the patient's nutritional state and psyche. Furthermore, this work focuses on the concept of addiction, syndrome of addiction and treatment. It then focuses in more detail on eating disorders in their context of users of addictive substances. I have chosen qualitative research for this work. The research body of this work is formed by ten psychiatric hospital patients. In the form of semi-structured interviews, it identifies eating habits at the time of active substance use and changes in those habits during the treatment process. The practical part consists of two chapters. The first is dedicated to case studies of individual patients, calculating energy intake from weekly menus. In the second chapter, the results of semi-structured interviews with patients are evaluated. This work shows that being in a drug rehabilitation clinic benefits the patients studied in terms of their nutritional status. Most of them experienced weight gain and subsequent stabilisation due to a regular and balanced diet. Part of the benefit of this work is helping to adjust and renew menus, calculate the dietary system and overall communication with patients at this facility.
Alcohol Addiction Treatment System in the Czech Republic

This bachelor thesis is focused on alcohol addiction and describes the system of care available to alcohol addicts in the Czech Republic. The practical part of the thesis describes function of the system in practice and finds out the availability of addictological social services, healthcare services and institutional care before and during epidemy of Covid-19 in the South Bohemian region. Furthermore, the work is devoted to identifying shortcomings in the system and availability of addictological social and health services in the South Bohemian Region for alcohol addicts.
Prostorová diferenciace spotřeby alkoholu ve světě

This bachelor´s thesis engages in the spatial differentiation of alcohol consumption in the world, namely on the level of individual countries, as well as their regions It focuses not only on how this socially pathological condition is spread out, but also on the economic, social and cultural indicators that influence it. The correlation analysis was used to make a comparison. Cartograms helped to show the spatial differences, peculiarities and tendencies. Statistical data of alcohol consumption was ascertained from the World Health Organization (WHO). An important part of this work is the synopsis, where there are generalizations and follow-up investigations of the main determinants affecting the studied conditions.
Analysis of drinking regime student TUKE students in Košiciach (SK)

The bachelor thesis focuses on the issue of the drinking regime of a select group of people, namely Tuke students in Košice. In the theoretical section, I conducted a literary research of available resources relating to the subject. This section is divided into two chapters. The first chapter deals with the importance of water to the human organism and the general principles of the drinking regime. It also contains insights into water, bottled mineral waters, sweetened sodas, juices, milk and addresses the issue of alcoholic and non-alcoholic drinks in drinking mode and their effect on the human organism. As part of the second chapter, I discuss the quality of both bottled and unbottled water in the Košice region and Slovakia, where I carried out research investigations. The research methodology is described in the practical section. I chose a questionnaire method to collect the data. Partial results are characterised and discussed at the conclusion of the work.
Basic analytical components changing during the final stages of beer production

The aim of this thesis is to observe the final phase of beer production in cylinder-conical fermentation and ripening tanks. The task is to observe and measure basic analytical parameters while finishing beer fermentation, that include: % alcohol (weight), % alcohol (vol.), % real extract, % apparent extract, % extract of the original wort, relative density, and osmotic pressure. The theoretical part of this thesis explains the concept of beer, further it clarifies legislative requirements on beer production, requirements on quality and ingredients. It further describes the chemical composition of beer, the fermentation of beer, as well as the principle of the functioning of cylindro-conical fermentation and ripening tanks. The practical part of the diploma thesis compares data gained through measurements of samples of 10° and 12° bottom fermented beer of Pilsner type, a half of samples being taken from cylindro-conical tanks, and the second half being taken from open tubs. Other chapters provide the processed results of inividual measurings, and the conclusion sums up all the facts that were found.
