Ripening and loss of beef meat during storage

The thesis is focused on the preparation of the preview issue of aging beef, the required length of storage, conditions and mass losses during the storage period. In the theoretical part there are described the chemical composition, intravital affect on the quality, impact and post-mortem storage of beef in more details, as stated in the literature. The practical part deals with weight loss within slaughter halves during the ripening process, the conditions and the required length for curing meat. The slaughtered animals were beef breeds, particularly Charolay, Aberdeen Angus, Limousine and Galloway.
Content of biogenic amines and polyamines in expired ripening cheeses

The aim of this thesis was to observe the occurrence of biogenic amines and polyamines in selected types of ripening cheeses and to assess the content of the materials since the expiration date. Content of biogenic amines and polyamines in chosen samples was monitored last day of the expiration date, a week after the expiration date, two weeks after the expiration date, and after four weeks from the end of the expiration date.
Possibilites of improving the quality of beef by ageing

Internal and external factors affect the quality of meat, however ageing affects final product. Main objective of this work was to determine the effects of ageing on selected physical factors (pH, colour, water holding capacity and texture shear force) which affect meat quality from consumer and further meat processing perspective. Measuring of those factors was performed in periodical time sequences (one day post-mortem and 14 days of ageing) and factors of raw and heat-modified meat were measured. There were two hundred and fifty-eight samples from Czech pied cattle used in research. Musculus longissimus lumborum et thoracis (sirloin) was analyzed. Statistically high shear force difference (P=0.001) was identified at heat-modified and aged samples (decrease from 22.574 kg to 14.885 kg). Decrease of shear force during ageing of raw meat samples was observed at normal pH (pH < 5.8) beef ? from 6.403 kg to 5.982 kg. Correlations between pH and water holding capacity was found at samples which undergone ageing (r = 0.879 ***) and also at one day post-mortem samples (r = 0.872 ***). Middle correlation was observed between colour and pH at all colour parameters ? L* (r = -0.479 ***), a* (r = -0.478 ***) and b* (r = -0.581 ***). Water holding capacity and pH have influence on shear force of raw beef and also heat-modified beef; this was confirmed by correlation analysis. Lightness (L*) and water holding capacity affect heat-modified samples texture which was confirmed with multi-regression linear analysis (R2 = 0.565). As shown above the influence of meat ageing on quality parameters is high and properly aged meat from young bulls has better texture values. If the aged beef will be sold regularly it could be expected that consumer demand will increase especially due to remove the inconsistency of the quality of beef.
The development of self-reflection and maturation of the students of psychology and other helping professions.

This thesis focuses on the importance of personality maturation and development of self-concept in the study of psychology and other helping professions, in connection with the future responsibilities and personal demands of the profession. The theoretical part shows the most important developmental milestones in the formation of personality that makes people reach maturity in performing helping professions. The work is a recurring topic of identity formation and self-esteem as a further important aspect in the development of personality. Are described here as motivation, its importance and some of its specifics in the helping professions. Examines the practical, based on qualitative research among students of selected subjects, the development of motivation for learning and ideas about the future performance of helping professions. Furthermore, as knowledge and experience gained in studying the student can utilize in your daily celebrity and professional life and how these effects reflects the self- reflection of its functioning.
Using Art Play for Deepening Selected Themes in the VYTAX Youth Programme

The main focus of this master?s thesis is to bring forward and describe the scope of options of how, with the help of fine arts and implementation of experiential pedagogy, young people are creatively aided in processing and grasping variety of topics of the motivational educational program VYTAX, that has as its primary goal to stimulate youth to active involvement in the church. In the theoretical section of this work, the author has attempted to explain the terms relevant to the program itself as they relate to the church and subsequently to clarify the basic ideological direction of the given program in the context of today?s postmodern era. The author places emphasis not only on the program and techniques, but most of all on the pivotal value and impact of quality pedagogical leadership of given collective of young people. In the practical section, the author proposes concrete treatment of 10 topics of the VYTAX program. The scope of topics regarded range from themes of personal spirituality to subjects that not only apply to integration to the church community, but also describe the course of implementation of motivational appeals that will lead participants to an active, creative integration into the church family.
