Consumption of Milk and Dairy Products

The Bachelor's thesis describes the composition of cow's milk and states the nutritional importance of milk and dairy products in human diet. The thesis specifies and defines individual types of dairy products. Furthermore, it concentrates on how the annual consumption of milk and dairy products in the Czech Republic and European Union changed during history. The thesis also mentions important negative factors influencing this consumption. Finally, the thesis focuses on innovative ways related to new trends in packaging.
Milk and dairy products as a source of nutrients for the inhabitants of the Czech Republic.

The thesis is focused on milk and dairy products as a source of valuable nutrients for the inhabitants. The theoretical part deals with general chemical composition of milk and dairy products are described and their significance for human health. The practical part consists of questionnaires on the subject and their evaluation. The aim of the study was to determine what knowledge the people of milk, how often you eat and what resources it can be obtained.
Evaluation of sensory quality of milk products by instrumental and sensory analysis

Sensory quality of dairy products is nowadays a very important product quality evaluation and is among the oldest. The analysis comprises the evaluation of color, aroma and flavor, texture. A comparison of sensory and instrumental analysis of milk products was made. Based on the obtained data it was evaluated that the sensory analysis is still an indispensable part and a device that could replace human sensory perception has not been developed yet.
The Technology of Processing and Sensory Quality Rating of Cow?s Milk and Chosen Products Made of It

The bachelor thesis deals with the technology of processing and sensory quality rating of cow?s milk and chosen products made of it. I have set two aims and from them arising research questions. The first aim was to describe the technological procedures of the cow?s milk processing and to describe partial steps in the production of chosen dairy products. The second aim was to evaluate sensory properties of dairy products of an ecological production and the products of a common food processing operation. The thesis is divided into two basic parts, theoretical and empirical ones. The theoretical part is aimed at the technology of the milk processing. There is the description of the production of chosen types of dairy products, such as consumer milk, sour dairy products and cheese. The aim was not only to describe the technology of the milk processing and the procedures of the production of dairy products, but also to capture the most frequent sensory defects and the causes of their formation. Further, the theoretical part is aimed at the pure dairy cultures. In this section of the theoretical part there is described the procedure of their gaining, the most frequently used kinds of cultures and their defects. The last but not least in the theoretical part, there are briefly characterised the most frequently occurring diseases transmitted by milk. The processing of these pieces of information was done through the study of the technical literature and the Internet sources. In the empirical section, I examined, if the technological procedures of the milk processing and the procedures of the fresh cheese production used on the ecological farm differ from the technological procedures used by the common food company. Further, I wanted to evaluate, if the differences occur in the sensory qualities of the products of these two producers. I attempted to capture the differences in the technologies of processing with the observation directly in the factories. Two institutions were chosen for the observation. As the first one the bio farm Slunečná in the Prachatice district was chosen. A common food processing operation was the second object of the research. It was MADETA, a.s. Jindřichův Hradec. I elaborated the data gained through this research into a clearly arranged table using the application Microsoft Excel. I examined the differences in sensory quality of the products by means of sensory analysis of the chosen products. Ten non-specialist evaluators of all age groups participated in the evaluation. They received the sensory questionnaire in which they marked their subjective feeling from the product tasting using the point scale. These parameters were evaluated: colour, consistency, smell and taste of the consumer milk, yoghurt, yoghurt milk and cheese. The evaluators always had two samples of every category. One came from the ecological production and the second one from the common food processing operation. The results of the questionnaires were averaged, transformed into a table and graphically demonstrated in graphs using the application Microsoft Excel.
Food products and their marketing on farming markets

The production and sale of animal products must meet the rules set out in the relevant legislation. The producers, sellers and organisers are obliged to observe the rules. The questionnaire survey was performed directly at the markets and also by phone and email inquiries. The survey was carried out in the South Bohemian region. It focused on the producers of meat and dairy products. The survey revealed that majority of the products offered at the markets are dairy products made of sheep and goat milk. The milk itself is sold only rarely, due to its short durability and difficult preservation. Although the demand for fresh meat is high, the farmers offer it only to a lesser extent at the market. Majority of the breeders sell meat directly at their farms, based on binding orders.
Dietary habits of younger school children

The bachelor thesis is concerning dietary habits in young school-age children. There was set one major goal of the thesis, to find out more about dietary habits in young school-age children including basic recommended principles of healthy lifestyle - regular food intake, sufficient and balanced water intake, sufficient fruit and vegetables consumption, and regarding the fact that the subjects were school-age children, also sufficient intake of dairy products. Theoretical section explains terms, describes recommended dietary intake of nutrients in each stage of children´s development and contains food guide pyramid with all food groups and follows their satisfaction in children´s diet. There are also discussed topics as 1-day food intake pattern, visiting fast-food kiosks, and also quality and quantity of water intake. In the thesis are also listed preventive programs targeted on healthy eating in children taking place at basic schools under the sponsorship of Health, Agriculture, and School Ministries, and also of private organizations. To carry out practical section, there was chosen qualitative research method, method of low level interview, specifically semi-structured interview. Semi-structured interview was used in children at basic schools in Ceske Budejovice and at Lisov. The experimental group consisted of 6 participants, three boys and three girls from 7 to 11 years old. Each child was asked 10 basic questions and where necessary, I asked additional questions, to get more detailed information. Results showed that children of young school age have regular food intake with sometimes omitted breakfasts. Unfortunately, the compositions of daily meals do not meet the criteria of healthy eating. The half of respondents does not regularly eat for lunch two-course meal, i.e. soup and a main dish, and they also do not eat available fruit and vegetables with their lunch. The investigation also showed that most of the children do not have in snacks fruit or dairy products, but rather only pastries. From the participants´ answers is evident that half of respondents have sufficient intake of fluids qualitatively and quantitatively. Unfortunately, the other half of respondents do not drink enough fluids and also the composition is not adequate because of drinking only sweetened beverages. The positive finding was that no one of the experimental group indicated drinking some kind of stimulant beverages as for instance coffee, energy drinks, and cola drinks. Only one child out of all participants consumed recommended number of five pieces of fruit and vegetables. The intake of fruit was sufficient - at least two pieces a day, but it was also prevalent over vegetables intake, while recommendations suggest opposite ratio. No one of the participants has not eaten daily recommended amount of vegetables. The answers to the questions about milk and dairy products consumption demonstrated that most of respondents drink milk at least ones a day. No one´s intake met recommended daily amount of dairy products for children of this age, but the question is if the children really disliked dairy products or if that came of wrong dietary habits at home, or if I was inexperienced to interview children of this age. I also included two more questions that were not part of major investigative questions but seemed to me be important to have complete overview about dietary habits of each child. First question was about meat preference and the results showed that they all preferred chicken meat. No one was vegetarian and no one preferred fish meat. The second question was asking about visiting very popular fast foods. Results demonstrated that participants do not prefer this type of food. When I reviewed and compared results from my study with other studies concerning similar topic which was dietary habits in young school-age children we found similar results.
Structure of bioproduction market in South Bohemia

The intention of the diploma work was the choice of main sorts of bioproduction, charting of the structure of bioproduction in light of origin and detection of sold volume of chosen bio ? food stuff in the South Bohemia. The method - monitoring of the sale in terrain was chosen for charting of the structure of bioproduction. The bioproduction was found out in two types of markets ?markets and markets which are specialized for bio ? food stuff. In the South Bohemia there was chosen 15 markets and 15 markets which are specialized for bio ? food stuff. The structure of bio ? food stuff in light of origin (Czech/import) and in light of volume of sold production was found out in each market. The target bio ? food stuff were beef, grain, dairy products and fruit and vegetable. The data were found out from the packets of bio ? food stuff or through the interview with the chief of the market.
Sensory evaluation of selected milk products

The aim of this thesis was carried out using one of the methods of analysis of sensory evaluation of selected dairy products. Based on the proposed questionnaire survey carried out simultaneously on consumption and preference for selected commodities. The thesis was part of the project ECOP CZ.1.07/2.3.00/09.0081: "Comprehensive training of human resources in the dairy."
