Syrovátka ve výživě člověka
Dangová, Taťána
This bachelor thesis is focused on the current use and importance of whey and whey products in human nutrition. Whey, previously considered to be a worthless waste serving predominantly for animal feed, is currently valued for its excellent nutritional properties, especially for its rich protein composition, many of which have demonstrable positive effect on the human organism. The treatment and processing of whey give rise to a wide range of sensory-quality products, which are used not only in the food industry. The thesis describes earlier problems of whey processing, general information concerning its chemical composition, technological operations focusing on the use of membranes processes and the nutritional and physiological significance of individual whey components, which is primarily concentrated on bioactive peptides resulting from hydrolysis of protein.

Tato bakalářská práce obsahuje úvod do biomedicínských signálů a možnosti zpracování těchto signálů elektronickými obvody. Významná část práce se zaměřuje především na popis EMG signálu. Součástí práce jsou take schemata elektrických obvodů, které se používají především pro zpracování EMG signálů. Dále má práce praktickou část, v níž byly v simulátoru OrCAD Capture ověřovány funkce a parametry navrženého obvodu.
Growing of "Klokoty" cabbage
KOSTKOVÁ, Klára
The aim of this bachelor´s thesis is a summary of knowledge about growing, utilizing and usage of "Klokoty" cabbage produced by ZAS Dražice, a.s. Head cabbage is an excellent source of vitamins and minerals, also rich in fiber, proteins, glucosinates and methylmetionines. All constituents have a positive effect on human health. Thanks to the nutritional value and the long tradition of growing cabbage in the Czech Republic is this commodity widely grown and consumed in fresh and processed forms. Processed form is more common and done by fermentation. The "Klokoty" cabbage is a white head cabbage of late variety and can be purchased fresh whole or sliced up. Sliced up fermented "Klokoty" cabbage has been appraised by an award "Chutná hezky. Jihočesky" and a titul "Regionální potravina" thanks to its quality and flavor.
Kvalifikace primární půdní organické hmoty podle rychlostní konstanty oxidace v půdách s odlišným systémem zpracování
SLÁDKOVÁ, Jana
Soil organic matter is considered to be one of the most frequently discussed topics among professional associations and scientists. Both the content and the quality of soil organic matter radically influences not only the physical and chemical properties of soils but also the ecosystem services that soils provide. Many methods have been originated regarding the evaluation of quality and quantity of soil organic matter during scientific research. It seems that most of the methods employed in agricultural practices are encumbered by certain shortcomings. Principles of newly discovered methods of evaluating soil organic matter are described in this thesis. These principles proceed from dividing the portion of organic material into stable and unstable organic matter. We evaluated the quality of organic material from different sampling techniques (e.g. ploughing, disc harrow, deep tillage). The results have shown that different ways of cultivation influence the amount of quantitative and qualitative parameters of soil organic matter. For example we discovered the impact of cultivation on the quantity of soil organic carbon or on the quality of primary soil organic matter

Rozprýmová, Eva
Bachelor thesis on the topic of Utilization of flowers and fruits of elderberry (Sambucus nigra L.) and fruits of bilberry (Vaccinium myrtillus L.) in food industry is concerned with the possibilities of using selected species in food industry. They were monitored quality requirements and processing options of these species in the food in-dustry. Quality requirements were compared with real products. It was executed the market, where it has been found that from bilberry are most represented group yogurts and jams. The best quality group of products were chosen juices and lowest quality group were blueberry dumplings. Elderberry was on the market most often represented by syrups and teas. Možnosti využití plodů netradičních ovocných druhů
Gőttingerová, Martina
The topic of this bachelor thesis is to study the possibilies of the use of minor fruits and its products. Three species of fruits were proccesed: elderberry (Sambucus nigra L.), cornelian cherry (Cornus mas L.) and sea buckthorn Hippophae rhamnoides L.). The fruit of the elderberry (Sambucus nigra L.) were processed to makeelderberry syrup, compote and jelly. To compare the flavors a elderberry syrup was purchased. The fruit of the cornelian cherry (Cornus mas L.) was processed to make cornelian cherry syrup, cornelian cherry compote and jelly. The products of sea buckthorn (Hippophae rhamnoides L.) that were administered during tasting were sea buckthorn compote, sea buckthorn compote with apples and sea buckthorn jelly. To make a wider range of products from sea buckthorn, syrup of buckthorn and sea buckthorn jelly was obtained. Products from these fruit species of fruit were tested for sensory evaluation and the results were processed where succesful products were designated by test team. Using alternative minor fruit of fruit and its subsequent products makes for wider range of market use. They are suitable for domestic use as well as for the manufacturing industry. But because of their content they are best applied therapeutically.

Badinková, Lenka
The Diploma Thesis "Evaluation of tomatoes species with focus on technological features" at its literary part contains description of origin as well as a botanical characteristic of tomato, impact of consumption of tomatoes and products made of them on human health and structure of tomatoes´ substance. It also deals with the technology of growing, reaping and storing the tomatoes, the literature regarding mechanical features of tomatoes and the possibilities of their processing has been perused. Within the experimental part of the thesis there is the evaluation of individual species of tomatoes which are suitable for cannery processing conducted by appraising the cycle of reaping and quality of fruit (overall condition, crackle inclination, weight and dimension parameters, solidity, variegation, content of soluble solid, occurrence of acids, vitamins as well as amount of waste).
