The publication describes the activities of the Food Research Institute Prague in 2012. This activity is mainly focused on improving the level of the population's diet and on improving the supply of food, on improving the processes of food processing, on the development of special foods for groups of people with extraordinary health food demands, on the search and development of related control and evaluation methods , analytics including the performance of specific analyzes, and the development and manufacture of special measuring equipment and techniques. Data on the structure and organs of the institution, basic statistical data, results of the main (research) activities of the institute and other activities (pedagogical, educational, advisory activities, representation in national bodies, boards and commissions, international activities). The publication is bilingual (cz + en).

Title of diploma thesis: Investigation of proteolytic enzymes expression in different tissues at the transgenic animal model of Huntington's disease by means of biochemical and immunohistochemical methods Background: Huntington's disease (HD) is a neurodegenerative disorder that is caused by an expansion of a polyglutamine (polyQ) domain in the huntingtin (Htt) protein. Because it is known that mutant Htt and especially its small proteolytic fragments are toxic to neurons (particularly those in the striatum and cortex), it has been suggested that proteolysis of mutant huntingtin (mHtt) might play an important role in HD pathogenesis. Therefore, the aim of the present study was to examine the expression of endogenous and mtHtt and possible participation of the proteolytic enzymes from the group of caspases, matrix metalloproteinases (MMPs), kallikreins (KLKs) and calpains in HD pathology of brain tissue. Educational applications of the complicated biochemical processes models

My PhD study 'Educational application of models of complex biochemical processes' discusses the possibility of integrating simple bioorganic teaching experiments, modelling complex biochemical processes in living systems into a curriculum of secondary schools, and universities, and even elementary schools in some cases. The aim of these experiments is simplified, but illustrative and appropriate for approaching complex problems of biochemical processes in a transparent experiment, running in spite of conditions comparable to real natural clauses in a living system. The theoretical part is divided into three thematic circuits: biochemistry and bioorganic chemistry, bioorganic models and their characteristics and selected specific forms of applying bioorganic models into teaching chemistry. The next part dealing with bioorganic models and their characteristics is further divided on the base of some specific models. These are consisted of models of enzymes and their catalytic activity, models of biochemical reactions and antidotal and toxic substances affecting life-forms and their carcinogenic efficiency. Proteins - New educational materials for education in biochemistry at secondary level

Diploma thesis is focused on creation of educational materials supporting the education of biochemistry, specifically amino acids and proteins, at secondary level. At first the analysis of Czech chemistry textbooks concerning the two topics - amino acids and proteins was performed. The major problems found were related to the insufficient graphical representation of biomolecules, unsatisfactory motivational components and insufficient integration of the topic with biology or everyday life experience. The supporting educational materials, presented in this work, supplement the widely used chemistry textbooks. The materials includes a graphic oriented presentation, interactive animations demonstrating the process of denaturation and precipitating of proteins at macroscopic and molecular level, poster presenting the structural formulas of standard amino acids, 3D models of selected proteins, additional texts supporting the current topics concerning amino acids and proteins and the laboratory protocols for students. The presented support materials were evaluated at the secondary school conditions.
