Study of geographical authenticity of Moravian white wines

The aim of this bachelor thesis was to verify geographical autenticity of Moravian white wines based on elemental analysis. This data were completed with the analysis of organic acids, fenolic compounds and atioxidants in wines. There were used two spektrometric methods for the elemental analysis (ICP-MS and ICP-OES). The concentration of organic acids was mesured by Ion chromatography. To determine the concentration of phenolic compounds in wines there was used the high performance liquid chromatography (HPLC-DAD), the content of antioxidants and the total content of phenols was measured on spectrophotometer. In total there were 33 samples of wine from 4 Moravian subregions. For the purpose of determination the samples in groups the dataset was firstly corrected by Grubbs test for remote results. From those data the box plots were created which represents the minimal, maximal and mean concentrations of each measured component. Furthermore the analysis of variance was applied, which picked up 12 statisticly valuable parameters from the whole 47. By appliyng the multidimensional statistical methods (Pearson correlation analysis (PCA) and discriminant analysis (DA)) were compiled mathematical models for the division of Moravian wines according to geographical origin. The success rate of the discrimination test was 96,97%. The cross-validation test showed an 81,82% success rate for classifying unknown samples.
Possibilities of using of Vitis vinifera as a source of raw materials for cosmetic production

This bachelor thesis deals with preparation of extraction from various parts of grapevine and their consequent use in the manufacture of cosmetics. The theoretical part is focused on general characteristics of grapevine, its taxonomic classification, occurrence and cultivation. Subsequently, the chemical composition of grapevine parts and their uses in cosmetic, food and pharmaceutical industries is described. The final part is devoted to particular types of extractions and methods of determinativ of total phenolic substances. The experimental part deals with the optimization of the prepared extract in order to obtain the extract with the highest amount of total phenolic substances with respect to production costs. Factors such as selection of the appropriate solvent and extraction time are examined. 50% ethanol at the room temperature was found to be an optimal solvent. Finally, the physical and chemical properties, such as density, pH and refractive index were determined for the purpose of producing a material safety data sheet. The extract was processed into cosmetic products.
Study of geographical authenticity of moravian red wine

This bachelor thesis discusses the possibility of using analytical methods to determine the elemental profile of wine and to detect phenolic substances in wine. The theoretical part describes the Czech and Moravian subregions, chemical composition of wine, authenticity and methods of assessing the authenticity of wine. The next part contains a brief description of the analytical methods that were used in the experimental part. The experimental part deals with the determination of the elemental profile of wine by mass and optical emission spectrometry, the determination of phenolic substances by high performance liquid chromatography, the determination of antioxidant activity and the total content of phenolic substances. For the purpose of classifying wine samples into groups, multidimensional statistical methods (cluster analysis, principal component analysis, analysis of variance and discriminant analysis) were used to separate the groups according to geographical origin.

This thesis is focused on the impact of using soil conditioners in growing grapevine. In the experimental part the effect of Super Hume was evaluated at selected locations. It is impact on the quality and production was evaluated. The results were used to create the economic analysis when using Super Hume.

Grape vine in the Czech Republic have a long history and tradition. Each grown variety has its specific requirements for the composition of the soil and nutrients on rainfall and sunlight, than better and faster matures. Its fruits as well matured with optimum ingredients produced excellent wine. This result is trying to achieve winemakers in South Moravia, drawing on the experience of their predecessors. They use modern technology processing can achieve such excellent results, which will be appreciated by a consumer in the Czech Republic and abroad. Many of the wines produced in this area received great ratings and medals, but the field is still evolving and there is still space for improvement.

The aim of this bachelor thesis was an evaluation of climatic factors on the development of diseases and pests, regarding to the yield of a grapevine in the district Znojmo. There was described a detailed process of vineyard and wine cellar management in this theses. Methods for analyses used: field research and comparative. This theses also includes an detailed description from working operations to wine processing technology. Results have shown that, the development of diseases is dependent on climatic factors, aproach implementation of green work and application of chemical protection.

This bachelor thesis is focused on the cultivation of grapevines with the possibility of utilization of auxiliary soil substances during the planting under the conditions of organic viticulture. Organic farming has been on the rise in recent years, and the number of vineyards registered in this system is increasing every year. During planting, auxiliary soil substances play a significant role in relationship to both the plants and the soil. They contribute to the improvement of soil characteristics, and as a result, grapevine is more vital and resistant to harmful factors. These factors are especially important in organic vineyards, because chemical protection of plants cannot be used in this system in con-trast to conventional viticulture where a wide range of protection products can be used.

Theoretical part of the diploma thesis contains basic morphology of grapevine berries, chemical structure, extraction, storing and reproducing of grapewine juice. Literature review does not forget about right possibilities of grapevine juice ana-lysis and technical equipments which are required for measuring of viscosity, density and sugar content. Practical part of this diploma thesis deals with specific set of samples which were created for this thesis. Its about six kinds of grapevine grapes, which were picked up after one week interval for three times. After analysis some differences were detected in me-asured parameters between particular varieties and viscosity relation with sugar con-tent of grapevine juice. Results were discussed and outcome were concluded.
Mechanické vlastnosti bobulí vybraných odrůd révy vinné jako faktor ovlivňující jejich jakost

In the dissertation there have been done the determining of the mechanical properties of selected species in grapevine with respect to quality of grapes during ripening during four weeks. Determination was done by the TIRATEST 27 025 machine. Fixity skin of grapes was measurement on compress and penetration testing. Next determination was measurement of testing rip off stalk from grapes, weight, height and width of grape, also were measured sugar contents and titratable acids. For assessment were chosen this selected species: Rulandské šedé, Rulandské bílé, Sauvignon, Frankovka, Modrý Portugal and Cabernet Moravia. The results from compression test pressure on stalk were between 3,65 N (Sauvignon, on 3. gathering) − 20,92 N (Frankovka, on 2. gathering), in horizontal pressure 2,24 N (Sauvignon, on 2. gathering) – 9,6 N (Frankovka, on 3. gathering). The results of penetration test were between 0,54 N (Sauvignon, on 2. gathering) – 1,82 N (Frankovka, on 3. gathering) and the results from teasing stalk from grape test were between 1,02 N (Rulandské bílé, on 1. gathering) – 3,24 N (Frankovka, 4. gathering). There were found statistically important differences between all results between vine species and periods gathering.

The diploma thesis is focused on the economic analysis of the financial situation of the company VINSELEKT MICHLOVSKÝ a.s., the wine maker in the wine production industry. The thesis explains the issue of financial analysis and examines the current situation on the domestic market within the commodity vertical of wine. During the elaboration of the practical part the methodical approaches focused on the economic evaluation of the selected company were used and subsequently applied for a comparison with other enterprises. These findings were also used to include the analyzed enterprise in the commodity vertical and to assess whether its development corresponds to the development of the Czech Republic market with this commodity.
