Monitoring of cereal products uptake in a sample of Czech population

This bachelor’s thesis was focused on monitoring of consumption of cereal products and analysis of some of their active components. In theoretical part an overwiev of cereals and their composition was introduced. In experimental part a set of analytical parameters was obtained in selected cereal products: total phenolics, total flavonoids and antioxidant activity. The highest level of these active substances was detected in products containing chocolate and forest fruit. Further, 161 completed consumer questionnaires were collected. From these data common knowledge in consumers, their shopping conventions and individual products preferences were evaluated.
Analysis of biologically active substances in some cereal products

Presented bachelor thesis is focused on study of biologically active substances in cereal products. In theoretical part over view of cereal active substances, predominantly phenolic compounds were introduced. In practical part 15 kinds of cereal products were analyzed. In these materials some group parameters - total phenolics, total flavonoids and total antioxidant activity were measured by spectrophotometry. RP-HPLC/UV-VIS method was performed for analysis of selected individual flavonids. The highest content of phenolic compounds was measured in cereals containing fruits (raspberries, blueberries, tropical and red fruit), cacao, crusty fruits (hazel nuts, sunflower seeds) and buckwheat. All cereal products contain catechine, epicatechine, catechin gallate, epicatechin gallate, chlorogenic and ferulic acid. As a part of bachelor thesis simple sensory analysis was performed and consumer questionnaires were evaluated.
Cereal products and their nutritional value

The work deals with the exploration of public awareness regarding the basic knowledgeand consumption of cereal. The theoretical part describes the composition of cereals and their utilization for human consumption. It also deals with the nutritional value of cereals and health aspects of eating cereal. Among other things, the important parts of this work include the labeling of productsmade from cereals, important for market orientation and cereals in the prevention of civilization diseases. This work was done a survey of public awareness regarding the basic knowledge and their cereal consumption. The key idea is to determine what is public awareness and contribute to its increase. Questionnaire method was found that the public is informovaost for people with regularmotion activities higher than those without physical activity, women consume more cereals than men and that public awareness and consumption ofcereals does not increase with age. The conclusions of the work was created and educational leaflet, which summarizedrelevant information regarding their consumption and cereals.
The structure of supply and costs of cereal biofood in the selected region of the Czech Republic

The aim of this bachelor thesis was to evaluate the structure of the supply of organic cereals in the town Sušice. Comparison of the supply of organic cereals was made in different types of supermarkets (Billa, Albert, Penny, Lidl, Tesco and Coop) and in one specialized shop (Meduňka). The differences between the prices of organic and conventional cereal food were evaluated. The survey was conducted during six months, from November 2011 to March 2012. In total, 82 organic cereals were found, most of them were available in Meduňka specialized shop (37). The differences between the prices of organic and conventional cereal foods were significant. For example, in the prices of muesli bars and rice sandwiches, a survey has found that organic prices were 50 to 100 % higher. If someone bought one piece of all the organic cereal food in Sušice, he would pay 1152 CZK. The purchase consisting of one piece of adequate conventional product would cost 760 CZK. It means, that to buy organic products would be more expensive (76 %). It was also concluded, that the supply of organic food in Sušice was lower than the Czech Republic?s supply.
