Sustainability of public catering - Possibilities of implementation of organic products into the public catering

The bachelor's thesis deals with sustainability in communal catering and the possibilities of implementing organic food into public catering. The theoretical part of the work is focused on the development and structure of communal catering in the Czech Republic. He also deals with purpose-built catering, specifically competitive catering, school catering and current legislation related to it. The next chapter deals with the certification and control of organic products and organic food. The concept of organic farming is briefly explained, which is closely related to the concepts mentioned above. Furthermore, the regionality of food production in the given territory is discussed here, and towards the end of the theoretical part, the application of bioproduction in public catering and its perceived benefits, as well as obstacles, are mentioned. An organization ensuring the operation of selected corporate, school and public canteens was selected for the empirical part of the work. As part of the work, the main barriers to the introduction of regional foods and organic foods into this facility were evaluated and the possibilities of their application were assessed in connection with the availability of food raw materials from local suppliers. Furthermore, the consumption and costs of the main food raw materials during the year and the costs of replaceable equivalents in organic quality were calculated. At the end, the difference in costs against the current state was calculated and the result was then evaluated.

Sowohl der europäische, als auch der tschechische Markt für Bioprodukte wächst, und mit ihm auch die Anzahl der Kennzeichen, Logos und Versprechen, die im Verbraucher den Eindruck von ökologischer Verträglichkeit oder Nachhaltigkeit erwecken sollen. Diese Arbeit hinterfragt den rechtlichen Rahmen der Bioprodukte und überprüft dementsprechend, welche Regelungen auf dem Gebiet schon bestehen, auf welche Gebiete diese sich beziehen und, ob diese Regelungen in der Praxis wirklich genügen. Gerade, weil auch der tschechische Verbraucher immer mehr Kaufentscheidungen von Kriterien der Nachhaltigkeit und seinem Umweltbewusstsein abhängig macht, ist das Thema rechtswissenschaftlich sehr relevant. Diese Arbeit analysiert die europäische Regelung, hauptsächlich die "Ökologische Landwirtschaftsverordnung", aber auch die nationale tschechische Regelung, das "Ökologische Landwirtschaftsgesetz", da die Gestaltung des Kontrollsystems der Produkte und andere organisatorische Regelungen den Mitgliedstaaten überlassen werden. Näher befasst sich die Arbeit hauptsächlich mit Problemen der ökologischen Landwirtschaft in der Tschechischen Republik und deren rechtlichen Hintergrund. This bachelor thesis deals with the principles of organic farming. Organic farming is part of farming which do not involve the use of chemical inputs that adversely affect the environment, livestock health and human health. This production system is characterized by specific legislation and its own control mechanisms. It is an ever-evolving sector that has strong specifications in the field of livestock breeding and plant growing. The product of organic farming is bioproduct that can be further processed into biofood.

The theoretical part describes organic agriculture and its development, the current situation in the Czech Republic and the EU, meaning and processing of organic products, regional food, legislation, certification and environmental aspects of agriculture. The following section is devoted to the questionnaire survey on the topic,, Analysis of customer preferences in selecting food.'' Another part is devoted to environmental aspects related to the transport of food. Within Results and discussion sections are evaluated processed data and the main findings of work.
Súčasný pohľad na kvalitu záhradníckych produktov z ekologickej produkcie

Work on the topic: The Actual view on Quality of Horticultural Products made in Organic Production, was compiled in 2014-2016 at the Department of Floriculture and Vegetable Growing of Mendel University in Brno. Organic horticulture was formed at the break of 19. - 20. cen. as an answer to negative consequence to environment and quality of food of industrialism and intensification. This type of horticulture is built on principles of considerate life between people and nature together. Graduate propagation of organic horticulture around the world were carried out to establish an international organization IFOAM, which are with Europe union the umbrella organization of organic agriculture system within the bounds of law, control and certification of companies and the products. After 1990 and after transition of power was organic horticulture propagated in Czechoslovakia and with IFOAM were authorized first allocations and first associations was created here. Organic production of food in this region has not so old history but it found many of supporters here. Quality of bio-products, theirs labelling and controls are strictly given by Commission regulations and on the other hand with the regulations of member states. Differences between products of organic or conventional productions are still the main point of studies. There were a lot of studies recently made which verify that in bio-products is lower incidence of pesticide residues and higher concentrations of antioxidants. In this case is actual need for uniformity of methodology and for other collection of experimental results which can bring definite conclusions. But it is generally known that content of plants reflected the environment where they were grown.
Supply of organic food in the region of statutory city České Budějovice

This diploma thesis is focused on utilisation of organic foods analysis in eating facilities in the region of statutory city České Budějovice. The surveys in eating facilities are replenished by consumers´ survey which considers customers´ opinions about organic foods utilisation in gastronomy. The partial aim of this thesis is to compare the situation in the Czech Republic with chosen countries in European Union. In the introductory part, there are described basic terms with the help of primary literature which are related to ecological production and eating facilities. The practical chapter is consisted of introduction of concrete eating facilities with organic foods offer and the results of survey between eating facilities with and without organic foods offer and the outcomes from consumers´ survey. In the conclusion, there is appraised the present state and probable future development of organic foods utilisation in gastronomy in the region of city České Budějovice.
