The Application of Fuzzy Logic for Rating of Suppliers for the Firm

The aim of the diploma thesis is to propose an appropriate method how to appraise suppliers of aviation models and accessories of a Dutch company called Aviation Megastore. The company has already existed on the market for more than 25 years and has more than 170 suppliers all over the world. Therefore, there is a need to evaluate individual producers and distributors and consider their development over the years, or if it is necessary to finish cooperation with unreliable suppliers. For the supplier rating, MS Excel and MATLAB will be used.

Vliv aktivity ?-amylásy na kvalitu běžného pečiva

Hlavním cílem diplomové práce bylo zkoumat vliv přídavku alfa-amylasy na kvalitu bulek. Enzymy byly izolovány z Trichoderma viride a Aspergillus oryzae. Oba enzymy jsou určeny k použití v pekařském průmyslu. Nejprve byla stanovena aktivita obou použitých alfa-amylas a zjištěno, že daná metodika byla vhodná k použití. Následně byly oba enzymy přidány do receptur - vždy nejmenší a největší doporučená množství. Celkem bylo upečeno deset vzorků pomocí rapid mix testu, přičemž vzorky číslo 1 a 6 byly kontrolní vzorky bez přídavku alfa-amylasy, aby bylo možné posoudit efektivnost přidaných enzymů. Byla použita pšeničná hladká mouka T 530 (vzorek 1 až 5) a celozrnná špaldová (vzorek 6 až 10). Nakonec byla provedena senzorická analýza hotových bulek, změřen objem bulek a zjištěna tvrdost bulek 2, 24 a 48 hodin po upečení metodou TIRAtest.
