The bachelor thesis deals with the topic of sugars and other sweeteners. In the theoretical part, a brief overview of carbohydrates in terms of nutrition, composition and basic breakdown is given. In detail, attention is then paid to specific types of natural energy sweeteners, non-energy sweeteners and polyols. The health effects of these sweeteners, the history of their use and, in the case of sugar, their consumption and production are discussed. Particular space is devoted to the legislation, control and safety of some non-energy sweeteners. Part of the work focuses more specifically on the artificial sweetener aspartame and the cases concerning its safety and effects on human health. The aim of the bachelor's thesis was to identify the range of table sweeteners and syrups, to create a list of them and then to assess the most common types of syrups sensorially. Another objective was to find out what sweeteners the general public and high school students use, whether they prefer beverages with artificial sweeteners, and to find out their opinion on the safety and control of artificial sweeteners. The effect of artificial sweeteners on the metabolic parameters in type 2 diabetes patients

The impact of artificial sweeteners on health is a very common topic of discussions nowadays. This thesis focuses on the effect of artificial sweeteners on metabolic parameters of patients with type 2 diabetes mellitus (T2DM). The aim of this study is to clarify whether the consumption of artificial sweeteners affects metabolic parameters in T2DM patients. Another aim is to evaluate the awareness of T2DM patients about artificial sweeteners and the mean consumption of artificial sweeteners. Thirty patients with T2DM attending the diabetes outpatient clinic of the 3rd Department of Internal Medicine and 20 subjects in the control group were included in the study. Both groups completed a 16-question questionnaire. Laboratory metabolic parameters were obtained only in the patients group, and then evaluated in relation to the results of the questionnaire survey. A statistically significant association was found only for higher LDL cholesterol levels in patients examining food labels, and poorer diabetes control in those consuming diabetic products. Determination of sweeteners and preservatives in energy drinks by HPLC

This master´s thesis is focused on simultaneous determination of sweeteners and preservatives in energy drinks by liquid chromatography coupled with DAD and ELSD detection. The method was optimized for determination of aspartame, acesulfame K, saccharin, sucralose, steviol glycosides, benzoic acid and sorbic acid. Analyses were carried out on the Poroshell 120 EC-C18 column (4.6 x 150 mm, 2.7 m, Agilent) using mixture of methanol, acetone and water with formic acid and trimethylamine as a gradient mobile phase at a flow rate 0,5 mL•min-1. Validation parameters were determined (limit of detection, limit of quantification, repeatability and recovery). The validated method was applied on real samples.

The aim of diploma thesis "Sugar substitutes" was to create a list of sugar substitutes and review their impact on human health. It analyzes the realtionship of sugar substitutes to obesity, diabetes and caries. Diploma thesis discusses the possibilities of using sugar substitutes and their characteristics. Thesis includes information about acceptable daily intake of each sweetener and comparison its sweetness to sucrose. The brief description of every group of food additives and chapter about valid legislation are also parts of this thesis.
