Diplomová práce „Možnosti vzniku vady medicinální chutě a vůně v pivu“ se zabývá vzni- kem vady v pivu, která je popisovaná jako medicinální, protože svou přítomností připo- míná chuť a vůni po obvazech, dezinfekci nebo fenolu. V teoretické části je popsána technologie výroby piva včetně používaných surovin. Dále jsou popsány doprovodné procesy, které jsou zapotřebí k finalizaci konečného produktu. Teoretická část se také zabývá pivními vadami, zvláštní pozornost je věnována vadě medicinální. V praktické části byly připraveny čtyři varianty sladových roztoků, do kterých byly přidány kvasinky a bakterie. Po hlavním kvašení byly vzniklé nápoje analyticky změřeny a senzoricky tes- továny na přítomnost chlorfenolů, které způsobují medicinální vadu v pivu. Výsledky, zapracované do diplomové práce ukazují, že medicinální vada vzniká především v chme- lených nápojích při použití bakterií mléčného kvašení. The thesis "Possibilities of medicinal taste and aroma defect development in beer" deals with the development of a defect in beer, which is described as medicinal, because its presence resembles the taste and smell of bandages, disinfection or phenol. The theo- retical part describes the technology of beer production, including the raw materials used. It also describes the processes required to create the final product. The theoretical part also deals with beer defects, with special attention being paid to medicinal defects. In the practical part, four variants of malt solutions were prepared with the addition of yeasts and bacteria. After the main fermentation, the resulting beverages were analyti- cally measured and sensory tested for the presence of chlorophenols, which cause me- dicinal defects in beer. The results, incorporated in the thesis, show that the medicinal defect occurs mainly in hopped beverages when lactic acid bacteria are used.
