Cílem této bakalářské práce bylo stanovit obsah a koncentraci biogenních aminů v průběhu skladování ve vzorcích sladkovodních ryb – pstruh duhový (Oncorhynchus mykiss), okoun říční (Perca fluviatilis) a sumeček africký (Clarias gariepinus); a mořských ryb – losos obecný (Pleuronectes platessa), treska obecná (Gadus morhua) a platýs obecný (Pleuronectes platessa). Stanovení biogenních aminů ve vzorcích ryb bylo provedeno pomocí iontově-výměnné chromatografie s VIS detekcí. V analyzovaných vzorcích byly v nejvyšších koncentracích detekovány tyto biogenní aminy: kadaverin, putrescin, tyramin a histamin. V zanedbatelném množství se tvořil spermidin a spermin. V porovnání s ostatními rybami byl ve vzorku lososa detekován signifikantní růst histaminu, kadaverinu, putrescinu a tyraminu. The aim of this thesis was to determine the concentration of biogenic amines during the process of storage in the samples of freshwater fish – the Rainbow trout (Oncorhynchus mykiss), the European perch (Perca fluviatilis), the African sharptooth catfish (Clarias gariepinus); and saltwater fish – the Atlantic salmon (Pleuronectes platessa), the Atlantic cod (Gadus morhua), the Atlantic halibut (Pleuronectes platessa). The determination of biogenic amines in fish samples was performed by ion-exchange chromatography with VIS detection. Biogenic amines, i.e., cadaverine, putrescine, tyramine and histamine, were determined as the ones with the highest concentration present in the fish samples. Spermidine and spermine were formed only in insignificant quantities. The considerable growth of histamine, cadaverine, putrescine and tyramine was detected in the salmon in comparison with the other fish samples.
