Tato bakalářská práce je rozdělena do dvou hlavních částí. V první polovině je popsána technologie výroby bílých a červených vín, vhodné stavby a stavební objekty pro vinařství se zaměřením na haly. Dále jsou popsána nejčastěji používaná zařízení pro výrobu vína a jejich funkce. Ve druhé části je popsán stav stávajícího vinařství a navrženo plánované rozšíření provozu. Návrh dovybavení podniku včetně nové haly zohledňuje navýšení výrobní kapacity ze současných 8 000 litrů na 20 000 litrů ročně. Pro tento účel je zpracován návrh jednotlivých zařízení a nové haly. Celkové investice jsou plánovány ve výši 3 328 700 Kč. This bachelor‘s thesis is divided into two main parts. First part is devoted to description of the white and red wine production technology, suitable buildings and buildings for winery with an orientation on halls. The most frequently used equipment for wine production and their functions are described too. In the second part there is a description of the existing winery state as well as the proposal of a planned expansion of the operation. The proposal for the retrofitting of the company, including the new hall, takes into account the increase in production capacity from the current 8 000 liters to 20 000 liters per year. For this purpose, a design of individual facilities and a new hall is prepared. The total investments are planned at CZK 3.328.700.
