Tato bakalářská práce se zabývá výrobou piv z netradičních surovin. V literární rešerši je zmíněna legislativa, popis hlavních surovin pro výrobu piva, technologie výroby sladu a piva, možnosti využití jiných obilovin a pseudocereálií. Popsána je i problematika využití odpadů potravinářského průmyslu včetně pekárenských vratků. V praktické části byly testovány možnosti využití pekárenských vratků při výrobě piva. Byly vytvořeny receptury s přídavkem strouhanky z běžného pečiva a chleba k běžnému ječnému sladu. Instrumentální i senzorické hodnocení potvrdilo rozdíly jak v chemickém složení piva, tak i jeho senzorických vlastnostech. Pekárenské vratky tvořené chlebem se ukázaly být pro výrobu piva vhodnější než vratky z běžného pečiva, které měly negativní dopad na hodnocení chuti a vůně. This thesis is concerned with beer brewing using non-traditional substances. Its theoretical part examines the relevant legislation, describes elementary substances from which beer tends to be manufactured, lays out the technology of malt and beer production, and explores the possibilities offered by less frequently utilised cereals and pseudocereals. Attention is also paid to the issue of food industry waste including bakery returns, and to questions concerning its processing and reuse. The second section presents the results of practical testing and experiments. Possibilities of integrating returned bakery goods into beer brewing have been explored. Formulas have been put together with admixtures of breadstuff crumbs added to standard barley malt. Instrumental testing and sensory evaluation have confirmed, respectively, the existence of differences in chemical composition of the beers, as well as differences in their sensory qualities. Bakery returns consisting of common bread have proved to be more suitable for beer production than other bakery products such as Czech rolls, the latter having a negative impact upon the evaluation of taste and aroma.
