[cze][eng] Tato práce pojednává o vadě korku a potvrzuje, že sloučenina která se nejčastěji podílí na kontaminaci korku a následně vína je 2,4,6-trichlóranisol. Objasňuje příčiny kontaminace korku ve spojení s používáním přípravků na bázi chlóru. Také vysvětluje možnost kontaminace vína prostřednictvím skladovacích prostor. Práce obsahuje popis metody plynové chromatografie, pomocí které jsou detekovány látky způsobující vadu korku. Dále popisuje jednotlivé typy uzávěrů na základě jejich materiálového složení a fyzikálně-chemických vlastností, a porovnává jejich senzorický vliv na víno.This Bachelor thesis deals with the topic of cork taint varifying that the compound which causes the contamination of cork most often and consecutively of wine is 2,4,6-Trichloroanisole. It clarifies the causes of the contamination of cork in connection with the use of chlorine based products. Discussed is also the possibility of contamination due to the wine storage facilities. The thesis further includes a description of the gas chromatography method, whereby the chemicals defecting the cork are detected. Last but not least, it describes the different types of closures on the basis of their material composition and physicochemical properties, and compares their sensory impact on the wine.
