Bakalářská práce Možnosti inovace výroby pekárenských výrobků se v literární rešerši zabývá anatomickou stavbou a chemickým složením pšeničného zrna, mlýnskou technologii a speciální technikou mikromletí. Pozornost byla věnována netradičním surovinám v pekárenské výrobě jako jsou vláknina, mouka z obilovin a luštěnin, otruby a žitný slad. Cílem praktické části bylo provedení pekařského pokusu s přídavkem 3 různých forem žitného sladu odrůdy SELGO jako zdroje vlákniny v pečivu. Dohromady bylo sestaveno 7 receptur, kde základní surovinou byla pšeničná mikromletá hladká mouka speciál společnosti HERBER spol. s r.o. Upečené výrobky byly následně podrobeny senzorické analýze a výsledky statisticky zpracovány. Na základě informací z literární rešerše a poznatků z pekařského pokusu lze vyvodit, že žitný slad, který je přidáván do pečiva, je nejlépe upravit máčením nebo vařením. Bachelor thesis Innovation Opportunities in the Production Cycle of Bakery Products deals with the anatomical structure and the chemical composition of wheat grain, the mill technology and a special technique of micromilling. The main aim of the study is to look at non-traditional ingredients in the field of bakery production such as fibre, cereal and legume flour or bran and rye malt. The practical part is represented by a baking experiment, the principle of which is based on using three different forms of rye malt (the kind SELGO) as a source of fibre. In total, seven recipes were prepared. In order to maintain the objectivity of the experiment, all of the recipes were based on the same basic ingredient - the special wheat micronized palid flour made by HERBER spol. s.r.o. Afterwards, the baked products were reviewed by applying a sensory analysis, the results of which were finally statistically processed. Based on the gathered theoretical information and gained practical experience, it is concluded that the best way how to prepare rye malt as a substance of bakery products is to soak or cook it.
