Tato diplomová práce se zabývá vlivem přerušení teplotního řetězce na mikroflóru mléčných výrobků. V úvodu je popsán technologický proces všech devíti vzorků, které byly využity pro analýzy – Jadel bilý, Jadel kořeněný, Žervé, Svačinka, Máslo, Mozzarella, Tvaroh měkký, Bilý jogurt a Vanilkový krém. Další část práce je věnovaná mikrobiologickým požadavkům jednotlivých výrobků. V poslední části teoretické práce jsou popsaná mikrobiologická nebezpečí, která u vzorků hrozí. Práce je zakončena praktickou částí. U vzorků došlo k přerušení teplotního řetězce a následně byl zjišťován vliv přerušení. V práci se stanovoval celkový počet mikroorganismů, množství koliformních bakterií, kvasinek a plísní. This thesis deals with the effect of temperature chain breaks on the microflora of dairy products. In the introduction, the technological process of all nine samples used for the analyses is described – Jadel bily, Jadel koreneny, Zerve, Svacinka, Maslo, Mozzarella, Tvaroh mekky, Bily jogurt, and Vanilkovy krem. The next part of the thesis is devoted to the microbiological requirements of each product. The last part of the theoretical work describes the microbiological risks of the samples. The thesis is concluded with the practical part. The samples were subjected to a breakage of temperature chain and then the effect of the temperature breakage was investigated. The total number of microorganisms, coliform bacteria, yeasts, and molds was determined in the work.
