Literární část práce se zabývá jednotlivými formami vlákniny, zdroji rostlinného původu, ve kterých se běžně vláknina vyskytuje. Dále popisuje možnosti stanovení vlákniny, rozdělení a charakteristiku jednotlivých metod. V praktické části byla provedena analýza vybraných druhů ovoce, zeleniny a potravinového výrobku na obsah nerozpustné vlákniny metodou podle Henneberga a Stohmanna. Získané hodnoty byly porovnány s údaji v odborných publikacích. The literary part of the bachelor thesis deals with individual forms of fiber, source of plant origin, in which the fiber is present. It also describes the possibilities of fiber determination, distribution and characterization of individual methods.In the practical part of the bachelor thesis, an analysis of selected fruits, vegetables and food products on the insoluble fiber content was carried out by Henneberg and Stohmann method. The values obtained were compared with data in professional publications.
