Bakalářská práce se zabývá vlivem vybrané technologie výroby na látkové složení se zaměřením na fenolické a volatilní látky ve víně z odrůdy Tramín červený. V teoretické části se práce zabývá chemickým složením hroznů, chemickým složením vína a vybranými technologickými postupy. V experimentální části je popsán původ suroviny a jednotlivé technologické postupy při výrobě vína. Dále je provedena chemická a senzorická analýza vín včetně vyhodnocení výsledků. The Bachelor's thesis looks at the influence of selected production technology on the substance composition, focusing on phenolic and volatile substances in wine of the Traminer variety. In the theoretical part, the work deals with the chemical composition of the grapes, the chemical composition of the wine and selected technological processes. The experimental part describes the origin of the raw material and the different technological processes involved in making wine. Furthermore, chemical and sensory analysis of the wines is carried out, including evaluation of the results.
