[cze][eng] Bakalářská práce se zabývá porovnáním kvality masa, které bylo získáno na porážce s omračováním a bez omračování. Teoretická část obsahuje základní informace o mase, jeho význam ve výživě a základní složení. Také se zaměřuje na průběh porážení jatečných zvířat a produkci masa získaného konvenčním způsobem, halal a košer porážkou. Praktická část sleduje možné rozdíly v kvalitě a jakosti masa, zda odlišný způsob porážení jatečných zvířat může mít zásadní vliv na barvu, vůni, chuť, křehkost, případně šťavnatost nebo zda se jedná a o téměř stejné hodnoty z hlediska jakosti. Senzoricky se porovnávaly vzorky hovězího masa získané z provozní a halal porážky. Instrumentálními metodami byly zjišťovány hodnoty obsahu sušiny, tuku v mase a barvy u vzorků obou druhů masa. Senzorickou analýzou se hodnotily deskriptory: barva, vláknitost, vůně, křehkost, šťavnatost a chuť. Jak vyplynulo z výsledků, halal maso bylo světlejší a křehčí, ale oproti masu z provozní porážky bylo sušší. Hodnoty se lišily pouze nepatrně. Výsledky z instrumentálních metod byly téměř totožné, pouze u jednoho vzorku masa z provozní porážky byly zjištěny vyšší hodnoty obsahu sušiny z důvodu velkého množství tukové tkáně.The topic of my bachelor thesis is comparison of the meat quality of animals slaughtered with and without stunning during the process. The theoretical part consists of general information about meat, its significance in nutrition and its basic composition. It also focuses on the process of slaughtering animals and the production of meat in a conventional way, halal or kosher slaughter. The practical part deals with the difference in meat quality and asks question, if various ways of slaughter can affect color, smell, taste, fragility and juiciness of the meat. Samples of beef meat gained by conventional and halal slaughter were compared by sensorial analysis. The values of dry matter, water and color were found using instrumental methods. Sensorial analysis focused on color, fibrousness, smell, fragility, juiciness and flavor. As results showed, halal meat was lighter and more fragile, but also drier. Overall the differences between values were slight. The instrumental methods results were almost the same, only one sample of conventional meat had higher value of dry matter due to a its fat tissue part.
