[cze][eng] Tato diplomová práce se zabývá vybranými reologickými vlastnostmi vaječných žloutků, bílků a melanží u slepičích vajec, vajec obohacených o vitamín D a vajec obohacených o Selen a Jód. Vejce byla skladována po dobu 4 týdnů při konstantní teplotě 6 °C. Dále je v práci popsán vliv skladování na fyzikální vlastnosti (hmotnost a index tvaru) vajec. U vajec byl prokázán během čtyřtýdenní skladování úbytek jejich hmotnosti. V práci byl popsán i vliv skladování na vlastnosti bílku a žloutku – u bílku index bílku a Haughovy jednotky a u žloutku barvu, index žloutku a hmotnost. Během skladování docházelo k významné změně hmotnosti žloutku. Index žloutku se v průběhu skladování postupně snižoval. Index bílku a Haughovy jednotky se v průběhu skladování první dva týdny snižovali a čtvrtý týden nastalo mírné zvýšení hodnot. Nakonec byly stanoveny reologické vlastnosti tekutých vaječných hmot u daných vzorků slepičích vajec a to hustota, zdánlivá viskozita a smykové napětí v závislosti na smykové rychlosti (tokové křivky). Doba skladování měla vliv na tokové vlastnosti vaječných hmot u všech vajec, také výživa nosnic měla vliv na takové vlastnosti vajec. Reologické chování bylo modelováno pomocí Ostwald-de Waele (mocninného) modelu.This diploma thesis deals with selected rheological properties of egg yolks, proteins and mélange in hen eggs, eggs enriched with vitamin D and eggs enriched with Selenium and Iodine. The eggs were stored for 4 weeks at a constant temperature of 6 ° C. Furthermore, the work describes the effect of storage on the physical properties (weight and shape index) of eggs. Eggs lost weight during four weeks of storage. The paper also described the effect of storage on the properties of egg white and yolk - for protein the index of protein and Haugh's unit and for yolk the color, yolk index and weight. There was significant change in yolk weight during storage. The yolk index gradually decreased during storage. The protein index and Haugh units decreased during storage for the first two weeks and there was a slight increase in the fourth week. Finally, the rheological properties of liquid egg masses in the given samples of hen's eggs were determined, namely density, apparent viscosity and shear stress depending on the shear rate (flow curves). The storage time affected the flow properties of the egg masses in all eggs, and the diet of the laying hens also affected properties of the eggs. Rheological behavior was modeled using the Ostwald-de Waele (power law) model.
