Bakalářská práce se zabývá medem jako surovinou v potravinářských výrobách a kuli-nářství. Je zde popsáno rozdělení medů dle platné české legislativy. Část práce je zamě-řena na jeho producenty a chemické složení. Dále se práce zabývá problematikou použití medu v potravinářské výrobě a v kulinářství – konkrétně využitím medu při přípravě jídel. V rámci praktické části byly vyrobeny cukrářské výrobky, u kterých byly použity 4 druhy potahovacích hmot jejichž součástí byl i med. Potahovací hmoty se vzájemně liši-ly složením a zejména obsahem medu. Výrobky byly senzoricky ohodnoceny a výsledky byly zpracovány do bakalářské práce. This bachelor thesis on the topic „Honey as a raw material in food production and culi-nary“ enjoys the distribution of honey according to legislation. Part of the work is fo-cused on chemical composition, including honey producers. Other possibilities of work-ing with food, where it can be used, both in food machines and culinary - possible use in food preparation. Finally, there is a practical part in the work, which is at the place where the coating material is possible. There are sensory assessments where different results are compared and available to honey and without others.
