Tato diplomová práce se zabývá charakterizací rostlinných olejů, které jsou vhodné k výrobě analogů sýra. Teoretická část se věnuje popisu výroby analogu sýra, základních složek analogů sýra a možnostem, které mohou analogy sýra v budoucnu nabídnout. V experimentální části byly stanoveny tukové charakteristiky (číslo kyselosti, peroxido-vé číslo, číslo zmýdelnění a esterové číslo). Volné mastné kyseliny a triacylglyceroly mastných kyselin vybraných a nezpracovaných rostlinných olejů byly stanoveny na GC-FID. V práci byly pozorovány změny rostlinných olejů během technologického zpraco-vání při 85 °C po dobu 5 minut. This diploma thesis deals with the characterization of vegetable oils that are suitable to produce cheese analogues The theoretical part deals with the description of the produc-tion of cheese analogues, the basic components of cheese analogues and the possibilities that cheese analogues may offer in the future. In the experimental part, fat characteris-tics (acid value, peroxide value, saponification value and ester value). Free fatty acids and triacylglycerols of fatty acids of selected and unprocessed vegetable oils were de-termined at GC-FID. In this work, changes in vegetable oils were observed during tech-nological processing at 85 °C for 5 minutes.
