Veganství a vegetariánství patří mezi stravovací směry se stále se zvyšující popularitou. Jelikož patří mezi diety vyřazující určitou skupinu potravin, je třeba zabývat se rizikem nedostatku určitých nutrientů ve výživě. U dětí mohou být tyto nedostatky o to rizikovější. Tato práce se věnuje vybraným potenciálně rizikovým nutrientům, jejichž hladiny byly zkoumány u dětské populace. Cíle: Cílem této bakalářské práce bylo posoudit, zda existují rozdíly v hladinách zinku, vápníku a vitaminu D v krvi mezi vegetariány, vegany a omnivory. Vedlejším cílem bylo poté také sestavit doporučení pro rodiče ve formě edukačního letáku s informacemi o výživě při vegetariánství a veganství s ohledem na zinek, vápník a vitamin D. Metodika: Data použitá v této práci byla sbírána v rámci první fáze studie KOMPAS. Studie se účastnily celé rodiny stravující se homogenně, a to vegansky, vegetariánsky nebo omnivorně. Pro účely této práce byly použity laboratorní rozbory krve, odevzdané stravovací záznamy, údaje o věku, hmotnosti, výšce a užívané suplementaci. Celkově byly zpracovány údaje 130 dětí ve věku od 6 měsíců do 12 let. Tyto děti byly rozděleny do jednotlivých skupin podle typu diety, pohlaví a věku do 4 věkových kategorií a dále byly posouzeny hladiny daných nutrientů u jednotlivých skupin. Výsledky: Byly... As one of the diets that excludes a certain food group, the risk of deficiencies of certain nutrients in the diet needs to be addressed. For children, these deficiencies may be even more risky. This thesis focuses on selected potentially risky nutrients whose levels have been investigated in the paediatric population. Aims: The aim of this thesis was to assess whether there are differences in blood levels of zinc, calcium and vitamin D between vegetarians, vegans and omnivores. A secondary aim was then also to compile recommendations for parents in the form of an educational leaflet with information on dietary information for vegetarianism and veganism with regard to zinc, calcium and vitamin D. Methodology: The data used in this thesis were collected as part of the first phase of the KOMPAS study. Whole families eating a homogeneous diet, either vegan, vegetarian or omnivorous participated in the study. For the purpose of this thesis, laboratory blood tests, submitted diets, data on age, weight, height and supplementation used were used.
