Hlavním cílem diplomové práce je shromáždit informace o druzích rostlin, které by byly vhodnými netradičními zdroji pektinu. Dílčím cílem je na vybraném druhu ověřit možnost jeho využití jako zdroje pektinu pro potravinářství. Diplomová práce představuje 13 rostlinných druhů, u kterých hodnotí chemické složení, vlastnosti, a především možnosti jejich využití. Experimentální část ověřuje teoretické poznatky na jednom z představených zástupců ? tykvi olejné. U vybraného druhu byla stanovena: výtěžnost hrubého pektinu, vaznost vody, vaznost oleje, ochota tvorby želé a filmu. Nejperspektivnějšími rostlinami byly shledány: Amaranthus cruentus, Beta vulgaris, Crataegus monogyna, Cucurbita pepo, Daucus carota, Helianthus annuus, Linum usitatissimum, Pisum sativum, Solanum lycopersicum. Druhy mají potenciál pro vysoký obsah bioaktivních látek, zejména pektinů. Pektin lze doporučit k využití nejen v potravinářství, ale i v lékařství, farmacii a obalovém sektoru. The main objective of the diploma thesis is to collect information on plant species that would be suitable non-traditional sources of pectin. Another objective is to ve-rify on a selected species the possibility of its use as a source of pectin for the food industry. The diploma introduces 13 plant species and evaluates their chemical composition, properties and especially the possibilities of their use. The experimen-tal part verifies the theoretical knowledge on one of the introduced representatives ? oil pumpkin. The following parameters were determined for the selected species: yield of crude pectin, water binding, oil binding, and willingness to form jelly and film. The most promising plants were found to be: Amaranthus cruentus, Beta vul-garis, Crataegus monogyna, Cucurbita pepo, Daucus carota, Helianthus annuus, Linum usitatissimum, Pisum sativum, Solanum lycopersicum. The species have the potential for a high content of bioactive substances, especially pectins. Pectin can be recommended for use not only in the food industry, but also in the medical, pharmaceutical and packaging sectors.
