Tématem práce je stravování pacientů s histaminovou intolerancí a všeobecná znalost dané problematiky v ČR. V teoretické části je popsána funkce histaminu v lidském těle, další kapitoly jsou již věnovány samotnému mechanismu histaminové intolerance, jejím klinickým projevům, diagnostice a léčbě. V praktické části byly stanoveny dva cíle. Prvním cílem bylo porovnání informovanosti o dané problematice mezi laickou a odbornou veřejností v ČR. Druhým cílem bylo zmapování informovanosti o dané problematice u pacientů s histaminovou intolerancí. Pro naplnění prvního cíle bylo zvoleno kvantitativní výzkumné šetření, za pomoci bodovaného dotazníku, který vyplnilo celkem 280 respondentů z řad laické i odborné veřejnosti. Pro dosažení druhého cíle byla zvolena kvalitativní metoda ve formě rozsáhlejšího dotazníku. Otázky byly věnovány klinickým projevům, diagnostice, léčbě a obecné informovanosti o histaminové intoleranci. Výzkumný soubor kvalitativního výzkumu tvořilo 20 respondentů zastupující pacienty s histaminovou intolerancí. V rámci kvalitativního výzkumu byly dále v programu Nutriservis analyzovány jídelníčky respondentů s histaminovou intolerancí. Z kvantitativního průzkumu srovnávající informovanost o problematice histaminové intolerance vyšla jako úspěšnější skupina odborné veřejnosti na základě celkového bodového zisku. Nejednalo se však o příliš významný bodový náskok v porovnání s druhou skupinou. V kvalitativním výzkumu byly nejzásadnější výsledky, shodující se i s odbornými studiemi z oblasti klinických projevů, kdy jako nejčastější vyšly gastrointestinální obtíže. Dále se potvrdila obtížnost diagnostiky HIT, kdy u 60 % respondentů trvalo roky, než byla HIT odhalena. Analýza jídelníčků prozradila významně nižší energetický příjem u pacientů dodržující striktní počáteční eliminační dietní opatření. Má práce může do určité míry zvýšit veřejné povědomí o histaminové intoleranci. The topic of this thesis is nutrition in patients with histamine intolerance and the general knowledge about this issue in Czechia. The theoretical framework describes the hista-mine function in human body, following chapters are dedicated to the mechanism of histamine intolerance itself, its clinical manifestation, diagnostics and treatment. In the practical part, two goals were established. The first goal was a comparison of knowledge about this issue between general public and expert community. The second goal was to determine knowledge about this topic in patients with histamine intolerance. For the first goal, quantitative research using scored questionnaire was used. This form was answered by 280 respondents from both expert and general public fields. For the second goal, qualitative method was chosen, using a questionnaire with broader scope. The questions were focused on clinical manifestation, diagnostics, treatment and general knowledge regarding histamine intolerance. Sampling in qualitative research consisted of 20 respondents, patients with histamine intolerance. Also, as part of the qualitative research, the diet of the respondents with histamine intolerance was analyzed using "Nutriservis" software. In the quantitative research, comparing awareness of histamine intolerance, the experts proved to be more successful based on the points scored. This difference, however, was not very significant. In the quantitative research, the fundamental results corresponded with the data from other professional studies in this field, citing gastrointestinal issues as the most common. Also, the difficulty in diagnosing HIT was affirmed, given that in 60% of respondents it took years before HIT was diagnosed. The dietary analysis has shown substantially lower energy intake in patients following the initial strict elimination diet. My work can, to some extent, increase the public awareness about histamine intolerance.
