Tato práce sa zaoberá charakteristikou jedlých květů, ich použitím v gastronomii, rizikami spojenými s konzumácí jedlých květů, obsahovými látkami. Tato práce obsahuje 17 různých rostlin a jejich botanický opis, obsahové látky a jejich nároky na pěstovaní. Jsou tady popsané obsahové látky a ich funkcím v lidském organizmě (primární metabolity, sekundární metabolity) a ich léčivý, popřípade škodlivý účinek. Taky sa zabývá problematikou kvantifikace ťěžkých kovů a látkami glykosidické povahy, ktore jsou toxické ve větším množství pro rostliny i lidi. This thesis deals with characteristic of edible flowers, its usage in gastronomy, risks that comes with consuming edible flowers and containig substances of edible flowers. This thesis contains 17 different plants with closer look of botanica description, containing substances of particular sieces and conditions for cultivation. There are described functions of speciffic containing substances such (primary metabolites, secondary metabolites) and their healing or toxic effect on human body . This thesis also deals with quantification of heavy metals and glycosidic substances.
