Tato diplomová práce se zabývá technologií výroby speciálních sladů, které jsou určeny pro výrobu piva. Literární přehled je zaměřen na teorii výroby sladu a možnosti výroby speciálních sladů z obilovin, jako je pšenice, oves, žito nebo kukuřice, které je možno následně využít k výrobě piva. Pro experimentální část byly vybrány některé druhy obilovin, ze kterých byl v mikrosladovně vyroben slad. Tyto slady se poté využívaly k laboratorní přípravě piva, a to v poměru 50 % speciální slad a 50 % ječný slad. Na obilní mase i na získaném sladu byly provedeny základní rozbory (HTZ, objemová hmotnost, sklovitost a extrakt). Vyrobené pivo bylo analyzováno pomocí přístroje FermentoFlash (obsah alkoholu, skutečný a zdánlivý extrakt, stupňovitost, relativní hustota a osmotický tlak) a u každého vzorku byla stanovena hodnota pH. Nakonec byla provedena senzorická analýza, u které bylo nejlépe vyhodnoceno kukuřičné a ovesné pivo. Naopak nejhůře v hodnocení dopadla piva pšeničná. This thesis deals with technology of special malts production that are designed for the beer production. Literature review focuses on the theory of malt production and the posibility of special malts production from cereals such as wheat, oat, rye or corn, that can be subsequently used for beer production. Several kinds of cereals were chosen for the experimental part of the thesis and malts were made from these cereals. The malts were used for the laboratory preparation of beer in a ratio of 50% of special malt and 50% of barley malt. Basic analysis were performed for the cereals and also for prepared malts (TGW, density, glassiness and extract). The brewed beer was analyzed using the FermentoFlash (alcohol content, real and apparent extract, original wort, relative density and osmotic pressure) and pH values were measured too. Finally, sensory analysis were performed. The best evaluated samples were corn and oat beer. Wheat beer got the worst evaluation.
