Cílem bakalářské práce na téma "Jedlý hmyz a jeho postavení ve výţivě" je zmapovat konzumaci jedlého hmyzu u respondentů v anketním průzkumu, kteří jedlý hmyz jiţ v minulosti ochutnali či jej pravidelně konzumují. Byly stanoveny dvě výzkumné otázky: Jaké jsou nejčastější druhy jedlého hmyzu konzumované v České republice a jaké nutriční přínosy z hlediska subjektivního vnímání konzumentů hmyz představuje. Teoretická část bakalářské práce je zaměřena na seznámení se s pojmem "entomofágie" a na její postavení ve výţivě v jiných částech světa i u nás. Dále je zde vypsané nutriční sloţení u vybraných druhů hmyzu a zajímavosti spjaté se způsobem jeho úpravy, vyuţitím a konzumací ve vybraných zemích. Praktická část byla zrealizována na základě výsledku v anketovém průzkumu a vyhodnocení odpovědí respondentů, kteří se zúčastnili cateringové akce zvané "Velký hmyzí večer" v místní brněnské restauraci "Klub cestovatelů". Na základě vyhodnocení ankety bylo zjištěno, ţe entomofágie je v dnešní době brána pouze, jako trend moderní gastronomie. Není vyhledávaná ve větší míře, ale podle názorů lidí v průzkumu vyplývá, ţe zájem o konzumaci jedlého hmyzu bude v budoucí době postupně narůstat. Respondenti uvedli, ţe po překonání psychické bariéry je chuť jedlého hmyzu pozitivně překvapila, nicméně nedokázali s určitostí říct, zda jej na základě toho začnou více vyhledávat či zařazovat mezi své stravovací návyky. The aim of a bachelor's degree on "Edible insects and their position in nutrition" is to map the consumption of edible insects with surveys answered by respondents who have tasted or regularly eaten insects in the past. Two research questions had been identified: 1) What are the most common types of edible insects consumed in the Czech Republic, and; 2) What nutritional benefits they represent from the subjective point of view of insect consumers. The theoretical part of this bachelor's thesis is focused on getting acquainted with the concept of entomophagia and its position in human nutrition in other parts of the world and in our country. As well, there is listed nutritional composition of selected insect species and interesting points related to the way they are modified, used and consumed in selected countries. The practical part was made based on the evaluation of the results from the pollsurvey answers of the respondents who participated in the catering event called "Big Insect Evening" at the local restaurant "Club of Travelers" in Brno. Based on the evaluation of the survey it was found that entomophagia is currently only taken as a trend of modern gastronomy though not popular. It must be said that according to people's opinion, the interest in eating edible insects will gradually increase in the future: respondents said that after overcoming the psychic barrier, the taste of the insect was surprisingly positive, but they were not able to say with certainty whether they were not able to say with certainty whether they would start to search for it or rank it among their eating habits.
