Bakalářská práce se zabývá posmrtnými biochemickými procesy v rybách. Teoretická část této práce je zaměřena na popis probíhajících změn v rybách a produkci těkavých látek u různých druhů ryb během posmrtných změn. Experimentální část je poté zaměřena na sledování a chemickou analýzu těkavých látek z ryb za různých podmínek skladování. Analýza je prováděna na základě plynové chromatografie s hmotnostním detektorem. This Bachelor thesis deals with post-mortem biochemical processes in fish. The theoretical part is focused on describing the ongoing changes in fish and the production of volatile compounds in different species of fish during post mortem changes. Experimental part is focused on monitoring and chemical analysis of volatile compounds from fish under various storage conditions. The analysis is performed on the basis of gas chromatography with mass detector.
