Funkční význam bylinek, koření a dalších rostlin, včetně jejich složek, je v rostlinném a potravinářském výzkumu často vyhledávané téma. Rostlinný materiál obsahuje množství složek, které působí příznivě na lidské zdraví tak, že snižuje rizika chronických degenerativních onemocnění. K pochopení a vysvětlení biologických účinků je nutné umět jednotlivé látky definovat. První část diplomové práce se věnuje vybraným rostlinám (černý bez, kopřiva dvoudomá, měsíček lékařský, ostropestřec mariánský, rakytník řešetlákový, šalvěj lékařská, třapatka nachová a tymián obecný) a popisuje jejich léčivé účinky a použití. Druhá část práce charakterizuje fenolické a flavonoidní látky. Ve třetí, experimentální části, se kvalitativně i kvantitativně stanovovaly flavonoidní látky u vybraných druhů rostlin. Pro identifikaci byla zvolena metoda kombinující kapalinovou chromatografii a hmotnostní spektrometrii - HPLC/MS. Extrakce látek probíhala třepáním a Soxhletovou metodou za použití dvou koncentrací metanolu. Tyto metody byly následně statisticky porovnány. In plant and food research the functional significance of herbs, spices and other plants, including their components is very popular topic. Plant material contains many components that are beneficial to human health by reducing the risk of chronic degenerative diseases. It is necessary to define the individual substances to understand and explain their biological effects. The first part of thesis describes the selected plants (elderberry, nettle, marigold, milk thistle, sea buckthorn, sage, purple coneflower and thyme) and also describes their medicinal properties and uses. The second part of thesis deals with phenolic and flavonoid substances. In the third (experimental) part, of thesis there were qualitatively and quantitatively determined flavonoid compounds in selected plant species. For identification the technique combining liquid chromatography and mass spectrometry - HPLC/MS was used. Extraction was carried out by vortexing and Soxhlet method, using two different concentrations of metanol. These metods were then statistically compared.
