Předmětem této bakalářské práce je bezová šťáva, její charakterizace a možnosti jejího využití. V úvodu teoretické části je popsán bez černý, jeho odrůdy a chemické složení. Jsou zde zmíněny možnosti zpracování bezu černého, včetně výroby ovocných šťáv. V druhé části teorie jsou nastíněny možnosti využití bezu černého v lékařství a jsou zde popsány mikroorganismy, jejichž kontaminací by mohlo dojít k znehodnocení bezové šťávy, která může být použita do produktů zdravé výživy. Dále je zde popsána metoda, pomocí níž byly stanoveny minerální prvky v bezové šťávě. Experimentální část se zabývá stanovením mikrobiální čistoty bezové šťávy a stanovením množství minerálních prvků v bezové šťávě. Subject this bachelor´s thesis is elderberry juice, its characteristics and possibilities its utilize. At the first part of the theory is described elderberry, its species and chemical structure. There are mentioned the possibilities process of elderberry, including of producing fruit juices. The possibilities of utilize elderberry in medicine are outlined at the latter part of the theory and there are described microorganisms, whose contaminate could reach devaluation of elderberry juice, which can be used in the products health nutrition. Next there is described method whose help determined mineral elements in elderberry juice. The experimental part consinder of determination of microbial purity and the determination of quantity mineral elements in elderberry juice.
