[cze][eng] Cílem bakalářské práce s názvem "Jídelníček jedince s diagnózou mentální anorexie" bylo zmapovat obsah a kvalitu jídelníčku osob s diagnózou mentální anorexie. Mentální anorexie je velmi vážným onemocněním patřícím do skupiny poruch příjmu potravy. Prevalence tohoto onemocnění se zvyšuje, na což mají vliv především média a požadavky dnešní společnosti na nadměrně štíhlou postavu, dalšími faktory, které ovlivňují vznik mentální anorexie, jsou například faktory biologické, z nichž je podstatné ženské pohlaví, které je tímto onemocněním postiženo několikrát častěji než pohlaví mužské, dále pak faktory rodinné a genetické, sociální a kulturní. Tato bakalářská práce je rozdělena na dvě části a to na teoretickou a výzkumnou. V teoretické části se zabývám charakteristikou poruch příjmu potravy, podrobnějším rozborem mentální anorexie, včetně historie, příčin vzniku, příznaků a možných zdravotních komplikací, diagnostickými kritérii a také možností terapie. Též jsem podrobněji rozebrala jednotlivé složky výživy, tedy především bílkoviny, tuky a sacharidy, vlákninu, vitaminy a minerální látky. Zpracování výzkumné části jsem provedla prostřednictvím kvalitativního a kvantitativního výzkumu. Výzkumný soubor tvořilo šest dívek s mentální anorexií, z nichž tři dívky se s mentální anorexií neléčily a tři dívky procházely terapií. Všechny dívky byly studentky. Kvalitativní výzkum jsem realizovala formou zápisu týdenního jídelníčku jednotlivých respondentů do připravených tabulek. Hodnoty příjmu energie, bílkovin, sacharidů, tuků a vlákniny jsem poté propočítala pomocí programu "Nutriservis Profesional". Kvantitativní výzkum jsem uskutečnila pomocí dotazníků, ze kterých jsem se o respondentkách dozvěděla základní informace, jako je věk, výška, váha před začátkem diety, nejnižší hmotnost a aktuální hmotnost, dále jsem se zaměřila na to, co předcházelo vzniku nemoci, součástí byly tedy otázky týkající se vztahů s rodiči a na případné nevhodné komentáře k postavě dívek od spolužáků, také otázka na frekvenci pohybové aktivity, podstoupení terapie a hospitalizaci v nemocničním zařízení, pravidelnost stravování, aktuální náhled dívek na svou postavu a další. Poté jsem u jednotlivých respondentů shrnula informace z dotazníků, vypočítala jejich ideální hmotnost, kterou jsem stanovila tak, aby se pohybovala kolem hodnoty BMI (Body Mass Index) 25. Tato hodnota BMI je na rozhraní mezi normou a nadváhou. Pomocí knihy "Referenční hodnoty pro příjem živin" jsem spočítala doporučené hodnoty příjmu nejen energie, ale také bílkovin, tuků, sacharidů a vlákniny, se kterými jsem poté porovnávala průměrné hodnoty příjmu těchto živin v týdenním jídelníčku respondentek. V diskuzi jsem dotazníky i jídelníčky podrobněji rozebrala a informace z nich shrnula.The aim of this Bachelor thesis entitled "A diet of individual with a diagnosis of anorexia nervosa" was to monitor the content and quality of the diet of people with a diagnosis of anorexia nervosa. Anorexia nervosa is a very serious disease belonging to the group of eating disorders. The prevalence of this disease increases, to which primarily affect media and requirements of today's society excessively slender figure, other factors that influence the formation of anorexia nervosa include biological factors, one of which is substantially the female sex population, the disease which is affected more often than the male sex population, then family and genetic factors, social and cultural. This Bachelor thesis is divided into two parts: theoretical and experimental. The theoretical part deals with the characteristic eating disorders, anorexia nervosa detailed analysis, including the history, causes, symptoms and potential health complications, diagnostic criteria and treatment options. Also, I have analyzed in detail the various nutrients, mainly proteins, fats and carbohydrates, fiber, vitamins and minerals. Processing of the research I carried out through qualitative and quantitative research. The research sample consisted of six girls with anorexia nervosa, of which three girls with anorexia nervosa go untreated and three girls undergoing therapy. All the girls were students. Qualitative research was realized in the form of writing weekly menu of individual respondents in prepared tables. Intakes of energy, protein, carbohydrates, fat and fiber, then I have calculated all with using "Nutriservis Profesional" program. Quantitative research I conducted using questionnaires, from which I learned basic information about respondents, such as age, height, weight before dieting, the lowest weight and current weight, then I focused on what preceded the emergence of the disease, were therefore included questions regarding relationships with their parents and any inappropriate comments to figure from their classmates, also a question on the frequency of physical activity, undergoing therapy and hospitalization equipment, the regularity of meals, the current view of girls on their figure, and more. Then I summarized information about respondents from the questionnaires, calculate their ideal weight, which I set around the BMI (Body Mass Index) 25. The BMI is at the interface between the standard weight and overweight. Using the book "The reference values for nutrient intake" I counted Recommended Commission intakes not only energy, but also proteins, fats, carbohydrates and fiber, which I then compared the average value of the intake of those nutrients in the weekly diet of respondents. I analyzed the questionnaires and the diets in discussion and summarized detail information from them.
