ANOTACE Tato bakalářská práce se zabývá spotřebou drůbeţího masa a jejím vývojem v České republice a ve světě v posledních letech. Shrnuje důvody jeho oblíbenosti mezi spotřebiteli a posuzuje jednotlivé druhy a jejich podíly na celkové spotřebě drůbeţe. Zároveň je provedeno srovnání spotřeby drůbeţe mezi státy. V úvodní části je shrnuta spotřeba drůbeţího masa od roku 1948 do současnosti. Jsou zde v krátkosti vysvětleny důvody zvyšující se spotřeby drůbeţího masa. V další části práce je uveden význam masa v naší výţivě, druhy drůbeţího masa. Podrobně je popsáno sloţení drůbeţího masa a jeho jednotlivé základní sloţky, kterými jsou voda, bílkoviny, lipidy, vitamíny a minerální látky. Větší část práce je věnována spotřebě drůbeţího masa. Je zde porovnávána spotřeba masa v České republice a ve světě. V závěru práce je provedeno zhodnocení významu drůbeţího masa a jeho perspektiva ve výţivě lidí do budoucna. ANOTATION This thesis deals with a consumption of poultry meat and its recent development in the Czech Republic and worldwide. It summarizes the reasons of its popularity between the consumers and assesses different types of the poultry meat and their share of the total consumption of the poultry meat between countries is also done. In the introduction the consumption of the poultry meat from 1948 fill now is summarized briefly. There are explained the reasons of the increasing consumption of the poultry meat. The importance of meat in our diet and the species of the poultry meat are given in the next section. The composition of the poultry meat and its basic components as water, proteins, lipids, vitamines and minerals are described in detail. Bigger part of the thesis is devoted to the consumption of the poultry meat. The consumption of the poultry meat in the Czech Republic and worldwide id compared here. In the end of the work the evaluation of the meaning of the poultry meat and its perspective in human nutrition is done.
