Bakalářská práce se ve své literární části zabývá technologiemi, které ovlivňují vznik biogenních aminů ve víně, dále jsou biogenní aminy rozebrány z obecného hlediska, jejich vývoj a výskyt ve víně. Taktéž jsou zmíněny nejdůležitější biogenní aminy vyskytující se ve víně a jejich vznik. V neposlední řadě jsou zmíněny faktory, které přímo či nepřímo ovlivňují obsah biogenních aminů. Experimentální část je věnována především malolaktickému kvašení, které významně ovlivňuje obsah zkoumaného histaminu, fenyletylaminu, tyraminu, putrescinu, kadaverinu, sperminu a isoamylaminu v bílých vínech. The bachelor thesis deals in its literature part with the technologies that influence the formation of biogenic amines in wine, then biogenic amines are discussed from a general point of view, their evolution and their occurrence in wine. The most important biogenic amines present in wine and their formation are also mentioned. Last but not least, factors that directly or indirectly influence the biogenic amine content are listed. The experimental part is devoted in particular to malolactic fermentation, which has a significant effect on the content of the histamine, phenylethylamine, tyramine, putrescine, cadaverine, spermine and isoamylamine studied in white wines.
