Diplomová práce s názvem Elektrochemická detekce vybraných organických kyselin ve víně se věnuje problematice stanovení koncentrace kyseliny mléčné a jablečné. Změny v koncentracích obou kyselin mohou sloužit jako vhodný indikátor začátku, průběhu a konci malolaktické fermentace. V literární části se tato diplomová práce zabývá důležitostí stanovení koncentrací obou kyselin, především současnými metodami pro stanovení obou kyselin. Cílem práce bylo nalézt vhodnou elektrochemickou metodu, která by byla jednoduchá a přesná pro stanovení obou kyselin. V jednotlivých krocích je pak popsán výběr elektrochemické metody, výroba modifikačních materiálů pro elektrody jejich charakterizace a optimalizace metody. The diploma thesis - Electrochemical detection of selected organic acids in wine - deals with the issue of determining the concentration of lactic and malic acid. Changes in the measurement of both acids can serve as a suitable indicator of the beginning, course, and end of malolactic fermentation. In the literature part, this thesis deals with the importance of the determination of both acids, and current methods used in practice. The aim of the practical part of the thesis was to find a suitable electrochemical method for the determination of both acids that would be simple and accurate. The selection of electrochemical methods, production of modifying materials for electrodes, their characterization and optimization methods are then described in individual steps.
