Téma diplomové práce je analýza příjmu vybraných živin ve školních jídelnách. Cílem diplomové práce je zjistit, jestli školní jídelny plní normu spotřebního koše a výživové normy pro školní stravování v komoditě luštěnin. Práce je rozdělena do dvou hlavních částí. Teoretická část je rozdělena na 5 hlavních kapitol. První kapitola se zabývá výživou, druhá kapitola je zaměřena na živiny, třetí kapitola odkazuje na základní živiny, čtvrtá kapitola je věnovaná diferencované stravě a poslední kapitola je o stravování ve školním zařízení. Praktická část obsahuje výsledky plnění spotřebního koše v komoditě luštěnin u škol Jihočeského kraje, která pak porovnává výsledky s doporučením vyhlášky o školním stravování 272/2021 Sb. The topic of the diploma thesis is the analysis of the intake of selected nutrients in school canteens. The aim of the diploma thesis is to find out whether school canteens meet the standard of the consumer basket and nutritional standards for school meals in the legume commodity. The work is divided into two main parts. The theoretical part is divided into 5 main chapters. The first chapter deals with nutrition, the second chapter focuses on nutrients, the third chapter refers to basic nutrients, the fourth chapter is devoted to differentiated diets and the last chapter is about eating in school facilities. The practical part contains the results of filling the consumer basket in the commodity of legumes at schools in the South Bohemian Region, which then compares the results with the recommendations of the Decree on School Catering 272/2021.
