Introducing of method of pyridoxine determination by liquid chromatography in food products and resources

This master‘s thesis deals with quantification of vitamin B6 in beverages, food supplements and raw materials in food industry. The literature retrieval part summarizes general information about vitamines, vitamine B6, nicotine acid and vitamine B1. Further on in this part there is described principle of high pressure liquid chromatography and quantification of individual vitamines. In the experimental there are listed used tools, apparatus and chemicals. There is described preparation of idividual samples of food supplements, energy drinks, multivitamine drinks, beers and brewer’s malts. This chapter also contains information about chromatographic separatory systems Shimadzu and SpectraSystem. The quantification was performed by high pressure liquid chromatography on a reverse phase with gradient elution and two ways of detection, fluorescent and spectrofotmetric. The result of experimental activities and vitamine content in analysed samples are presented in the next chapter. In the final contains summarization of results obtained in experimental part. The maser’s thesis was measured in the laboratory of Institute of Food Science and Biotechnology, Faculty of Chemistry, Brno University of Technology.
Zinc in food suplements

The aim of this bachelor thesis was to determine zinc in the dietary supplements by the voltammetric method. The general properties of zinc, its occurrence, toxicity and influence on human health are described in the first part. Next the methods, including a detailed description of the voltammetric analysis, are summarized. The experimental part is focused on the process of optimization of the conditions for zinc voltammetric analysis and the application of the optimised method on real samples.
Estery karotenoidů v potravinách a potravinových doplňcích

Carotenoids are lipophilic dyes; their production is very important for photosynthetic processes as well as for tissue protection in leaves and as attractants in fruits. They are also crucial in human/animal nutrition for their antioxidant effects. Carotenoids can be found in plant and animal tissues both in free and esterified forms. The main goal of this bachelor thesis was to establish the method of saponification of carotenoid extracts from fruits, food supplements and subsequent analysis of the presence of carotenoid esters by HPLC. Saponification was tested with sodium and potassium hydroxides. Content of carotenoid esters was detected in food samples and in selected food supplements with presumed high carotenoid content. Findings are discussed in terms of carotenoid uptake in human digestive tract.
Determination of calcium in food supplements

Tato bakalářská práce byla zaměřena na stanovení vápníku ve vybraných potravinových doplňcích s využitím plamenové atomové absorpční spektrometrie. Nejdříve byla prováděna optimalizace podmínek s využitím plamene acetylen-vzduch a následně s využitím plamene acetylen-oxid dusný. Optimalizovanými parametry byla výška paprsku nad hranou hořáku, horizontální poloha hořáku, šířka absorpčního prostředí, průtoková rychlost acetylenu a oxidu dusného. Byla sestrojena kalibrační závislost stanovení vápenatých iontů a odpovídající meze detekce a stanovitelnosti. Následně byly vybrané vzorky potravinových doplňků několika způsoby převedeny do roztoku. Vyzkoušeno bylo rozpouštění v deionizované vodě, rozpouštění v koncentrované kyselině dusičné a rozklad pomocí mikrovlnného tlakového zařízení. Experimentálně bylo stanoveno množství vápníku v potravinových doplňcích, které bylo porovnáváno s údaji uvedenými od výrobce. Správnost měření byla ověřena analýzou referenčního materiálu.
Safety of selected dietary supplements with regard to the content of food additives I.

Safety of the selected food supplements in terms of the presence of additives Additives are commonly present not only in food, but also in food supplements. Safety of these substances remains a question. The aim of the theses is to evaluate the safety of the best selling supplements in the Czech Republic in the year 2011 from the viewpoint of additives and constituents. Given the scale of researched products, I focused on products strengthening the cardiovascular system containing omega 3 fatty acids , garlic, coenzyme Q 10 and lecithin. As a source of information about the content and the presence of additives, the data from the Ministry of Health and the Information System decision of the Chief Hygienist (IS RoHy) were used. The safety evaluation of additives was carried out on the basis of the available methodology for consumers. Information about adverse effects of additives and content substances were searched using information databases Martindale , Reprotox, AltMedDex, Drugdex, National Center for Complementary and Alternative Medicine (NCCAM), IPCS INCHEM, PubMed independent commission database JECFA Joint FAO / WHO Expert committee on Food additives. Consumption of food supplements for different groups of clients fitness center

This bachelor thesis deals with the consumption of dietary supplements for different groups of fitness center clients. The work is divided into theoretical and practical part. The theoretical part focuses on the basics of nutrition, and is described by energy intake and expenditure, macronutrients (carbohydrates, proteins and fats), micronutrients (vitamins and minerals) and drinks. The following chapter describes the basic supplements most commonly used in fitness. The practical part was processed using a questionnaire on social networks and in the fitness center Kentoya, Prague 10. The aim was to explore the most commonly used supplements, assessment of knowledge of the main effects of the supplements and visitors' experience with diets. The results are reported in tables and graphs and the answers on the internet and in the fitness center Kentoya are compared. The results show that almost 79 % of visitors to the fitness center take dietary supplements, the most widely used supplement is a protein drink. Approximately 67 % of visitors were during their life on some kind of diet and unfortunately the most common source of information concerning diet is the internet. Food supplements and nutrition of performance and professional cyclists

Title of the thesis: Food supplements and nutrition and performance of professional cyclists The goal of the paper: The aim of my work is to determine differences in the useing of dietary supplements and performance by professional cyclists. I also find out how different are the twosupplementation groups monitored before, during and after exercise. I focused on it also which marks of supplements by professional cyclist and cyclist who prefer performance. Of course I did not neglect to compare the groups surveyed drinks. Methodology: The data I obtained through a questionnaire that I circulated by an e-mail over the Internet.With some athletes I regularly meet in person, that I used for directly answering a questionnaire. The questionnaire used was clear and simple questions. The questionnaire is given below in the Annex. Most of the respondents interviewed were male and the age range was wide. Results: The results show that the greatest differences between groups of respondents are insupplementation before, during and after exercise. Use of Nutrition Supplements for the Elderly

The primary goal of my thesis was to describe the use of food supplements by seniors. Most seniors use medications prescribed by physicians and some of them also use over-the-counter food supplements that are more easily accessible. Seniors, in particular, are susceptible to considering food supplements to be as efficient as medications under the incessant influence of massive advertising on TV and other media, and many of them are willing to spend considerable amounts from their income on such preparations. In the theoretical part of my thesis, I define the term 'senior', describe the traits of ageing, and focus on the topic of nutrition in this age group. Then I focus on food supplements in general and their distinction from medications. The end of the theoretical part is focused on advertising and its impact on seniors. In the research part, which was prepared by means of a quantitative research, I examine the use of food supplements among seniors aged over 65, hospitalised at the Slaný Hospital. A total of 100 respondents were addressed, and 95 questionnaires were used at the end. The research shows that 60 % of the respondents use food supplements regularly or occasionally. UV-Photochemical Generation of Volatile Compounds for Determination of Se in Selected Nutrition Supplemets

The option of UV-photochemical generation of volatile compounds coupled with atomic absorption spectrometry for the determination of selenium in the real samples (pills) is described in this work. The optimum conditions of UV-photochemical generation of volatile compounds was investigated. After that the limit of detection as low as 58 ppt for Se+IV and 30 ppt for Se+VI was obtained. The nutrition supplement, which contain selenium, was choosen and analyzed by this method. Iodide and cupric interfere the determination of selenium in the real samples.
Determination of zinc in food supplements

- 1 - Abstrakt Tato bakalářská práce je zaměřena na stanovení zinku (zinečnatých iontů) v potravinových doplňcích pomocí atomové absorpční spektrometrie. Součástí práce je také porovnání mezí detekce dvou odlišných atomových spektrometrů. Cílem práce bylo zjistit optimální podmínky a vliv interferencí na stanovení zinku, nalézt vhodnou metodu pro převedení vzorku do roztoku, a také porovnat meze detekce u použitých přístrojů. Optimalizovanými parametry byla výška paprsku nad hranou hořáku, průtoková rychlost acetylenu, otočení hořáku, šířka spektrálního intervalu, typ plamene. Převedení pevného vzorku do roztoku bylo provedeno ve vodě za laboratorní i zvýšené teploty, v kyselině dusičné nebo kyselině dusičné s přídavkem peroxidu vodíku, též za zvýšené teploty. Analyzovány byly tyto potravinové doplňky: Centrum od A až po železo, Walmark- vápník, hořčík, zinek, Spektrum 50+, Calibrum 50 plus, Supradyn Energy Complex. Množství zinku v potravinových doplňcích bylo stanoveno na spektrometru GBC 933 AA v kolmém uspořádání. K porovnání meze detekce byly použity přístroje GBC 933 AA s výbojkou s dutou katodou a ContrAA 700 s xenonovou výbojkou. U obou přístrojů byl pro experiment použit plamen obsahující acetylen-vzduch. Pro stanovení zinku byla pomocí standardních roztoků vytvořena kalibrační křivka, z níž byly...
