Vyhodnocení reprodukce a masné užitkovosti na vybrané pštrosí farmě

The goal of the thesis is to evaluate reproduction and meat quality on a selected ostrich farm. Reproduction was evaluated by the number of laid eggs, fertilized eggs, hatched chicks, and raised chicks up to 6 months in the years 2020, 2021, and 2022. Meat quality was evaluated by the influence of gender and muscle type on dry matter, protein, fat, ash, meat brightness, proportion of red and yellow spectrum and the strength of muscle fibbers. During the year 2020, a total of 225 eggs were laid with a hatching success rate of 72.44 %. In 2021, the females laid a total of 159 eggs and the hatching success rate was 83.65 %. In 2022, a total of 214 eggs were laid with a hatching success rate of 80.37 %. Gender did not have a significant effect on the quality indicators of meat. Muscle type did not have a significant (p >0,05) effect on dry matter, protein, intramuscular fat, pH, tenderness, or proportion of red and yellow spectra. Muscle brightness, ash content, and muscle fibber strength were significantly (p <0,05) affected by muscle type.

This thesis deals with non-traditional meats and their use for food purposes. Specifically, there are 5 species, namely crocodile, ostrich, buffalo, llama and capybara. These meats are suitable as an alternative to commonly consumed meats, but also as a dietary diversification. In some cases, they are healthier, more nutritious, more dietetically appropriate and more appealing in terms of taste. Their disadvantage is their low availability and often high price. In the food industry, they are used in the same way as commercially available meats for the production of canned meat, sausages, semi-finished products, smoked meat products, dried meat and also directly in restaurants for steaks.
OCCURRENCE AND GENOTYPISATION OF CRYPTOSPORIDIES IN OSTRICHES IN FARM BREED

Avian cryptosporidiosis is a common parasitic disease caused by unicellular parasites belonging to the genus Cryptosporidium spp. These parasites have been described as a cause of various respiratory and gastrointestinal diseases of humans, farm and wild animals. Total of 204 faecal samples of common ostriches (Struthio camelus) were collected on four ostrich farms in the Czech Republic. Samples were screened for Cryptosporidium presence by microscopy and PCR/sequencing. Overall, 2.5 % (5/204) and 5.9 % (12/204) of animals were positive for Cryptosporidium by microscopy and PCR, respectively. Phylogenetic analysis of small subunit rRNA, actin and gp60 gene sequences showed the presence of Cryptosporidium avian genotype II (n=7) and C. ubiquitum IXa (n=5). Only ostriches infected with Cryptosporidium avian genotype II shed oocysts that were detectable by microscopy. Oocysts were purified from a pooled sample of four birds, characterised morphometrically and used in experimental infections to determine biological characteristics. Oocysts of Cryptosporidium avian genotype II measure 6.13 × 5.15 m, which is indistinguishable from C. baileyi and C. avium. Cryptosporidium avian genotype II was experimentally infectious for geese (Anser anser f. domestica), chickens (Gallus gallus f. domestica) and cockatiels (Nymphicus hollandicus), with a prepatent period of four, seven and eight days post infection, respectively and not infectious for mice (Mus musculus) and rats (Rattus norvegicus). The infection intensity ranged from 1,000 to 16,000 oocysts per gram. None of the naturally or experimentally infected birds developed clinical signs in the present study.
Analysis of the commercial properties of an ostrich

This thesis deals with the problem of commercial properties of an African ostrich collected on farms in the Czech Republic. Literature review focuses on the history, origin, economic benefits and also the breeding conditions. This work evaluates the utility of selected properties of ostrich farms in the Czech Republic. The values obtained were well described and evaluated by appropriate methods. Egg-laying farms was observed in the range from 15 to 50 pieces (mean 29.07 pieces), the weight of eggs ranged from 1.22 to 1.89 kg (mean 1.51 kg), fertilization of eggs were in the range from 54.55?86.00% (mean 76.36%) and a hatching rate was in the range of 31.82?52.77% (mean 44.61%). Weight of meat obtained from slaughter ostrich ranged from 30 to 50 kg (mean 39.74 kg), the skin area was in the range from 1.10 to 1.50 m2 (mean 1,34 m2) and the production of feathers was from 1.36 to 1.50 kg.
Ostrich meat quality and the situation on the Czech market

This thesis solves a question of ostrich breeding and carcass processing of ostrich meat. Furthermore the quality of ostrich meat and its position on today market. Ostrich is the biggest living bird on earth whose meat is red and very similar to beef composition but properties are more similar to poultry meat. Ostrich meat, compared to other animal meat, contain low percentage of fat, cholesterol and proteins. For most kind of meat with low fat reflected at the expense of subtlety, but ostrich meat is an exception. Despite its dietary character it provides full-value proteins and important vitamins B. The best quality meat comes from ostriches in the age of 9 ? 14 months, who reached weight of 90-120 kg. The meat gain in the age of 14 months ranges about 32 kg and 42 kg in adult ostriches. Substantial part of the marketable meat comes from ostrich legs (74 %). Ostrich meat unlike beef meat is sold in individual muscles. Meat is divided into steaks, filets, biltong and meat for smoked production.
Analysis of the types of breeding ostriches in the CR

This work deals with the problem of analysing of types of ostrich farms in the Czech Republic and the inclusion of different types according to the intensity of farming. It introduces a possible candidate of breeding ostriches with the non-traditional livestock, the origin, history, housing conditions and the economic profits. This work evaluates some selected ostrich farms in the Czech Republic. They were further described and classified into different types of farms according to the intensity.
