The diploma thesis is focused on the comparison of the quality characteritics of fallow deer meat originating from farm breeding, in cluding the assessment of the influence of different methods of slaughter, gender, and suplementary feeding of mothers during the lactation period on the occurence of qualitative changes in the texture of the meat literature rewiev is devoted to the definition and composition of meat, and then selected characteristics of meat are described individually. At the end of literary part, information about farm breeding is sumarized. In the practical part, the farm breeding of fallow deer of the Friedberger family is presented. Then the results from the analysis of the chemical composition of deer meat are presented, followed by an assessment of the occurrence of qualitative changes in the texture of meat depending on the monitored factors.

This thesis "Effect of concentrates feeding on slaughter weight and carcass composition in farmed fallow deer (Dama dama)" evaluates the influence of two different sorts of complementary food and a nutritive supplement to slaughter weight and structure of a fatted body. The literature summary is complemented with results of the experiment conducted on The Mnich Farm near Kardašova Řečice in association with The Institute of Animal Science. Ten-month fallow deers were divided into three groups. Each of them was kept separately, one (the control group No.1) was fed only by pasture, the group No.2 and No.3 were fed by complementary food consisting of barley and oat in a ratio of 2/3:1/3 in the amount of 0,4 kg per one head and day. The group No. 3 was extra served by the nutritive supplement containing protected lysine. The animals were weighted at the beginning of the experiment and in the process of slaughter at the age of sixteen months. Fifteen heads of cattle were randomly chosen from every group and they were slaughtered during three days - five at a day from each of group. The animals were transported to the slaughterhouse afterwards where the slaughter preparation was done according to the JUT´s (The Slaughter Preparation of meat stock classification) and the SEUROP´s (The System of Slaughter Preparation of meat stock classification) rules. The differences were statistically compared. Beyond the task the economical evaluation of profitability of complementary food and nutritive supplement admixture to the feeding ration and the slaughter processing effectivity has been made.

The topic of my bachelor theses was to study specialized literature followed by the analysis of breeding of fallow deer (dama dama) in farm breeding. In the first part of my theses I focused on the specification of fellow deer, its etology and breeding requirements involving nutrition and zootechnical interventions. In the second part of my work I focused on the management of a herd and the comparasion of information learned from literature to breeding on an existing farm called Mnich. I compared the living conditions offered by farm breeding to those offered in the wild.
Principles of nutrition of fallow deer (dama dama)

My bachelor thesis deals with literary sources describing the fallow deer (dama dama), their biology, ethology, feeding and the nutrients necessary for this species. It also focuses on the fallow deer farming, its history and requirements, including the legislation. The thesis presents a draft of a feeding concept for farmed fallow deer. This concept is based on an experiment, which has taken place at a private farm Mnich near Kardašova Řečice in collaboration with Výzkumný ústav živočišné výroby Praha Uhříněves. The results of the experiment have become the ground for comparison and the constitution of the most efficient feed intake.
Evaluation of impact of magnetoreception at farmed fallow deers.

Bachelor thesis deals mapping of the Earth's magnetic field with fallow deer on the farm. The theoretical part of the thesis describes the magnetic field principles magnetoreception and magnetic orientation of animals. Magnetoreception is the ability to perceive the Earth's magnetic field animals to take directional and positional information and use it to navigate in space. The practical part is the evaluation of field monitoring game. During direct observations were grazing or resting game photographed and was written the direction which the photo was taken. This was followed by the evaluation of the direction of orientation of game on the farm. There was also a comparison of the data according to the current state of the weather and according to the distribution of males, females and cubs. When evaluating the results was confirmed by hypothesis, that vertebrates, in this case, fallow deer are in everyday processes alignment the north-south axis.

This diploma thesis examines the influence of air temperature on the behavior of fallow deer in farm kept. The literature review presents fallow deer characterization; it gives an overview of fallow deer management methods and describes the current situation in farming in the Czech Republic. The research part deals with observations of behavioral patterns of fallow deer. Every month in the course of a calendar year, a selected group of farmed fallow deer was observed all day, with special regard to their behavioral patterns concerning grazing, feed intake, standing or lying. Air temperature was measured every time. My research has shown a significant effect of air temperature on the behavior of fallow deer. Grazing was most prevalent in May (52 %), feed intake in January (39 %), lying in December (43 %) and standing in November (31 %). Moreover, spatial preferences of mineral deer-licks were examined in relation to feeding habits. The study has demonstrated that the location of a deer-lick has a considerable impact on its use. Fallow deer prefer significantly (75 %) a deer-lick close to a watering place rather than the deer-lick close to the border of the area. The results of the research were analysed in graphs and statistically evaluated by reference to Pearson's chi-squared test.
I chose breeding deer and muflon farmed

The aim of the study is to evaluate basic expressions of both species of animals breeding on farm regard to changes during pasturage period. Breeding of moufflons and fallow-deers has started to expand in the Czech republic recently. It is joined with hight costs of breeding and exacting for live space. The study is intented to obtain available information about description of both species and their mutual breeding on the farm. The study describes definite farm, which was chosen by author. The farm is situated near Mokrosuky municipality, Pilsen discrict. It was founded in 2007. The farm is located 532m above the sea. The farm and animals are owner´s hobbies and he is filed to Czech-Moravian breeder society joint-stoke company, like each breeder. There were seven fallow-deers, thereof one male and six females in time of establishment. There were four moufflons too, thereof one male and three females. In 2010, the herd was expanded to eleven moufflons and twenty fallow-deers. Three moufflons were four years old , four heads were older than five years and four the youngest heads were one year old. The fallow-deer heads were three males, seven females five years old and nine young heads. Youngs were born on the farm. One fallow-deer died for pneumonia and two young fallow-deers died for accidents in 2012. Changes went through in stucture of herd on start of pursuance. One female of moufflon died for pneumonia and one young moufflon was slaughtered for a meat. Two fallow-deers were sold to freinds, who interested in to buy a meat. One fallow-deer was presented to The Agriculture and manufacture association Hrádek u Sušice, because The Agriculture and manufacture association gave some cereal products to the owner for free. Quantity of fallow-deers was changed from original 20 heads to 17 heads. Three ethological pursuances were implemented on the farm.
Breeding of european bison in stock farme

Breeding of European bison (Bison bonasus) in the Czech Republic has begun to expand recently. The main aim of this graduation theses is to aquaire foreign information of this European breed and map breeding of this species in our country. Furthermore this thesis includes description of breeding European bison on one specific farm in Radany in South Bohemia and monitoring of ethologic knowledge of this certain herd. Bisons are kept in semi-natural conditions on the farm in the area of 14 ha. The basic herd of bisons forms 13 heads of Low-Caucasus genetic line. This part concludes with presentation of information boards of nature trail which is part of the Radany farm.
